I’m kind of bummed because I haven’t been able to ride my new bike yet and it’s been rainy in Albany, NY.
Tomorrow, I’m heading downstate to Rockland County to stay at my parent’s house for a week and to work at my old office job. I don’t have a bike rack yet so I can’t take my bike with me
I don’t want to put the bike on the balcony yet because it’s new and I don’t want it to get wet. I’ll have to get a tarp to cover it. Jeff says it smells like a rubber factory in the apartment because the bike is just sitting in the living room! ha. Oh well.
I’ve been seeing bowls of watermelon all around the healthy blog world and have been craving some, so I asked Jeff to pick me up some on his way home from class last night.
It was my dessert plus 1/2 of one of the berry lemon muffins I made.
This morning I had an amazing breakfast. I had one scrambled egg with some parsley added in. A whole grain english muffin, half topped with a small amount of PB&J and a side of watermelon and raspberries. It kept me full for a good amount of the day! I also just started taking the generic version of One a Day for Women. I have only been taking it for a couple days so I’m not sure how it’s working yet, but I’ll update soon.

Jeff and I had to run some errands and stopped at LL Bean and Barnes and Noble along the way. LL Bean is offering $15 two hour kyack session every Saturday and Sunday till the end of the summer!!!! I’m totally doing it! I used to be on a canoeing team in high school but I’ve never kyacked. I’ve heard it’s very similar. I guess I’ll see. I forgot to grab one of my muffins for a snack before we left so I bought a Black Cherry Almond Clif Bar and a Dulce de Leche Luna Bar at LL Bean. I ate half of the Clif bar and it was fantastic. Oh, and I also drank half of a small blueberry iced coffee with skim milk and sugar from Dunkin Donuts (yum). I can’t wait to try the Luna Bar. I’ve never had one before. I’m sure it will be delicious.
After spending an hour in the diet and exercise section in Barnes and Noble (I could spend 5 more hours there everyday), I bought The Essential Eating Well Cookbook which feature a collection of amazing recipes from Eating Well magazine. All of the recipes have calorie counts and they all look so good. I can’t wait to try them out!
When we got back, I decided to heat up the rest of my Tuscan Roasted Vegetable Pasta from Pizza Uno. The whole serving at the restaurant had about 980 calories, so I split the portion in half when I ate at the restaurant which amounted to 490 calories which was fine with me. It was full of a bunch of yummy vegetables and whole grain penne pasta. I had half my leftovers for lunch yesterday and then the other half today (about 245 calories for each serving). It filled me up. I forgot to take a picture until I was half way done eating it so you can’t really see but it’s filled with squash, zuccini, and onions.

Well that’s all I have for right now. I need to go pack for my trip tomorrow!! Have a good evening!
