Hi all! I am finally back at my apartment in Albany and am very excited to say that the boyfriend and I went GROCERY SHOPPING today! Now we have a freezer full of veggies and a fridge full of fruit! Huzzah! I think my boyfriend wants to kill me because I spent like 2o minutes in the organic section. He was already done with the rest of our shopping list by the time I was done looking at everything!
I didn’t have the chance to post yesterday because it was a very hectic day! I woke up and made my brother and I scrambled eggs and english muffins. I spread Whole Food’s natural peanut butter on my whole wheat english muffin and it was amazing! I also had cherries! Then I hit the road! I stopped to see my friend Julianne along the way. We went to Subway and I got my usual –> 6″ Turkey, lettuce, tomatoes, green peppers, cucumbers, and red wine vinegar on whole wheat. Yum!


After hanging out with Julie for a few hours, I got back on the road to Albany. On the way, I ate half a White Chocolate Macadamia Luna Bar and stopped at Starbucks for a venti unsweetened black iced tea!

When I got home, my boyfriend took me on a welcome home DATE!!! We went to P.F. Chang’s China Bistro. I was very pleased that their nutritional information was on the website. I printed it out and brought it with me to the restaurant. I decided on the almond cashew chicken with brown rice. This dish was 280 calories for one serving (the total dish is 3 servings). I also got a mini dessert!! I chose the red velvet cake with cream cheese icing. It was so good and only 170 calories!

I would definitely recommend P.F. Chang’s. They even have a gluten-free menu!
Today, Jeff made me scrambled eggs! I added 1 slice of whole wheat toast with Whole Food’s natural peanut butter and an apple.

I also had a cup of Yogi Meditation Tea. Please excuse the string cheese pictured. I did not eat that even though I planned to. I was too full!
After breakfast, we went grocery shopping. As previously stated, I picked up a bunch of good things which will make appearances on the blog for the rest of the week. I even picked up the ingredients to make Eating Well‘s whole wheat pizza dough! We are planning on making the recipe for blueberry burgers tonight! I’ll let everyone know how that comes out!
I decided to go on a bike ride when we got back. Before I headed out, I ate a banana, a hand full of almonds, and a glass of Silk soy milk for energy! I love Silk! I still drink regular milk but I treat soy milk as a luxury. Silk is my favorite brand and it should be yours too!

When I got back from my bike ride, I had some of the left overs from P.F. Chang’s.
