Mexican Omelet and V8 V-Fusion Fruit Cubes

Good Afternoon! I am still sore from my bike ride yesterday and somehow I magically weigh 2lbs less than I did last night. Hmm.. interesting.

For breakfast, I decided to whip up a Mexican-style omelet.

Ingredients

  • 2 eggs
  • Tbsp skim milk
  • Tbsp Drew’s Organic Mild Salsa
  • Shredded 50% reduced fat cheddar
  • Green Pepper
  • Parsley and Black pepper to taste

  1. Mix eggs, milk, parsley, and black pepper in bowl
  2. Spray an 8-10 inch frying pan with non-stick cooking spray and let heat for a couple minutes on low-medium heat
  3. Pour egg mixture into pan and stir immediately to separate eggs out to edge of pan
  4. Let sit for 1-2 minutes or until bottom of omelet looks cooked
  5. Add pepper,salsa, and cheddar to one half of omelet and fold over using a spatula
  6. Heat until eggs are completely cooked

I had 1 slice of wheat toast with PB and a handful of blueberries on the side. Yum!

After breakfast I decided to experiment with V8 V-Fusion Acai Mixed Berry Juice. These days I’m only drinking unsweetened iced tea and water but Jeff likes this juice so I figured why not make V8 Juice Cubes!  So, I pulled out an ice cube tray, some blueberries, and the juice and now they’re chilling in the freezer. I’ll probably just put them in my water when they’re done to add some flavor! We’ll see how they come out!

Just pour the juice into the ice cube tray and add blueberries to each cube. :-)

Well, now it’s time for some Kashi 7 Grain Crackers and Laughing Cow Cheese!  I’ll be back with pictures and fun later!

  • AH! Salsa and eggs…BEST COMBO EVER! I’ve been known to beat some salsa, hot sauce (addicted) and cheese into my eggs and then soft scramble them – think of it as the lazy lady’s version of the mexican omelet ;) . yumyumyum!
