Now, since I know you’re all dying to know about my day, I’ll tell you! ;-P
I had an incredibly busy day, and by busy I mean that I made food all day and went to the gym twice. Oh, and sat on my couch.
For starters, I had this for breakfast:

This dish was very similar to the Mexican-Style Omelet I had the other day. In fact, the only difference is that it was scrambled and not an omelet. Oh, and I used one egg white.
Ingredients included:
- 1 egg, 1 egg white
- 1/2 tbsp Drew’s Organic Mild Salsa
- Shredded 50% reduced fat cheddar
- Green Pepper
- Black Pepper to taste
I also had a whole wheat english muffin and some blueberries.
After breakfast, I walked to my new gym and did 30 minutes/2 miles on the elliptical.
My post-workout snack consisted of Fage 2% with peach with some blueberries mixed in.

It was phenomenal. I have to say, Chobani and Fage Yogurts are my two favorite yogurts ever. I couldn’t stand yogurt before I tried these two brands. Trust me, if you don’t like regular yogurt specifically because of its consistency, try Greek Yogurt and I promise you will love it.
Ok, for lunch I made the most amazing salad I think I’ve ever had outside of a restaurant. I don’t mean to brag, but I’m sorry, it was awesome. Look at it!!

What I used:
- 50/50 Spring Mix: baby romaine and spinach leaves
- Carrots
- Green Peppers
- Tomatoes
- Blueberries (duh!)
- Almonds
- Annie’s Lite Raspberry Vinaigrette (about a tbsp +1/2)

I used my mini chopper to chop up the carrots, peppers, tomatoes, and almonds. The dressing was absolutely incredible. It added the perfect flavor to complete the most amazing salad ever. If you don’t believe me, try it.
For a mid-afternoon snack, I had a slice of whole wheat toast with Whole Food’s PB and Wild Blueberry Fruit Spread

And almonds

Then I walked to my new gym to try out a pilates class. I know I’m only saying this after one class, but I love pilates. I really do. I could really feel my core being worked out. Who else loves pilates?
And finally for dinner:

A veggie burger topped with 2 Tbsp of Drew’s Organic Mild Salsa and shredded 50% reduced fat cheddar on an Arnold Select sandwich thin with a side of broccoli. YUM!

Pilates rocks!!! Pilates is to me, what yoga is to alot of other people. I love the workout, the focus on breathing, the mind/body connection, the core workout and how much it helps with posture. I just feel so much stronger, all over, after pilates. Hope you continue to enjoy it!!!
Oh my that salad looks great… I love fruit in salads it makes them a million times better!
