Hiya! Hope everyone had an amazing Sunday! I did a lot today! The weather wasn’t so great this morning so I decided to go to the mall. Before I left, I had a quick snack comprised of this

and these

Plus some salsa

The Spinach & Artichoke Hummus was absolutely amazing! Think spinach dip from a restaurant but without all the unhealthy ingedients! This was a perfect pre-mall snack. It kept me full all day.
I hung out at Barnes & Noble for a while reading Health Magazine.

Of course that was my favorite article. I almost ate the blueberries off the page! I shopped around the mall for a while and discovered that I have gone down two sizes in jeans! Yay me!
When I got home from the mall, I made a fabulous wrap

In my wrap:
- Spinach
- Chopped Carrots
- Chopped Tomatoes
- Chopped Walnuts
- Strawberries
- Blueberries
- 2 tsp Annie’s Lite Raspberry Vinaigrette

I also had 1/2 of a banana with some almond butter in between

Can you believe that this was my first time trying almond butter? I was hesitant to buy a whole jar because I wanted to taste it first. I knew I would love it but I wasn’t sure what kind to get a full jar of. What is your favorite Almond Butter brand? Help me out!
After lunch, I took a nice, long bike ride

I wanted a snack when I got back, so I pulled a new yogurt out of the fridge


This flavor sounded great but it was way too sweet for me. If you like sweet yogurt, go for it. I also don’t like regular yogurt as much as greek yogurt. I ended up taking a couple spoonfuls and giving the rest to Jeff.
I had a slice of WW toast with peanut butter instead

I was craving lasagna for dinner, but by the time I got the store and back with the ingredients, I was too lazy to start with it. I will make it tomorrow night. Instead, I made a simple dinner

- Whole wheat spaghetti
- - 1/2 cup Classico Fire Roasted Tomoto and Garlic Pasta Sauce
- Crushed Red Pepper Flakes
- Pinch of Parmesan Cheese
- Asparagus

The crushed red pepper and the asparagus were the stars of tonight’s dinner. Yum!
For dessert, I pulled out my Hungry Girl cookbook and followed her very simple recipe for Chocolate Mousse

All it calls for is 1 Jell-O Sugar Free/Reduced Calorie Pudding Snack (any flavor) and 1/3 cup of Cool Whip Free. I used chocolate-vanilla swirl and mixed in some semi sweet chocolate chips for fun!

Using Hungry Girl’s recipe without the chocolate chips, this dessert only comes to 100 calories! Nice! I definitely recommend it for a guilt-free decadent dessert! You can even put it in a fancy cup (unlike mine) and pretend to be fancy!

You could stretch your Rachel’s yogurt and cut the sweetness. Just mix it into some plain greek yogurt!
That’s a really good idea. I did like the flavor at first but the sweetness was sickening. Thanks for the suggestion. I’ll have to try that!
