Hey All! Well, I’ve had an exciting night! I hope everyone is having a great one as well! Jeff and I made these awesome Chili Burgers from The Essential Eating Well Cookbook for dinner and that was an adventure in itself, but I’ll get to that in a bit.
Before I headed to the gym this morning, I snacked on a bowl of cherries

You’ll be seeing a lot of cherries in upcoming posts because I bought over a pound of them at the store yesterday!
When I left my building to walk to the gym, I was sad to see that it was raining so I had to drive instead.
My workout consisted of 40 minutes of Cardio:
- Total Body Crossramp (3.7 miles)
and a Strength Workout:
- Bicep curls- 3 sets, 20 reps with 5 lb weights
- Dumbbell Military Press- 3 sets, 20 reps with 3 lb weights
- Squats- 3 sets, 20 reps with 5 lb weights
- Lunges- 2 sets, 20 reps on each leg with 5lb weights and a elevated step
- 80 crunches (20 with legs up, 20 with legs down)
After a sweaty couple hours at the gym, I headed home and had more cherries with my lunch. Actually, I made an amazing fruit salad comprised of Cantaloupe, Cherries, Blueberries, and Bananas

I also heated up more leftovers from Saturday
I am so glad these leftovers are almost gone! I’m so sick of them!
Jeff and I headed over to the library for a little while, where I picked up this book

I started reading it last summer on my trip to California but never finished it! I figured I’d try again. After we left the library, we spent some time at the mall, where I stopped by Starbucks and ordered an Iced Skinny Vanilla Latte for an afternoon snack

I tried on a bunch of clothes at H&M and ended up not buying anything. We started getting hungry at around 6:30 so we headed home to try out a recipe for Chili Burgers from our Eating Well Cookbook

These burgers were excellent, although a bit messy! They’re more like black bean burgers than chili burgers but that was ok. They wouldn’t stay together in the pan so we had ours sloppy joe style. I am going to use the leftovers for some amazing nachos tomorrow for lunch! Here is the recipe from the website.

While I was chopping the jalapeno, I scratched right beneath my nose. OH MAN-did that hurt!!! I immediately flushed it in water, not knowing that that’s the worst thing you can possibly do. My nose got all red and was peeling! It hurt so bad! I would have more pictures of meal preparation but Jeff had to finish the recipe by himself. I frantically called my mom, not knowing what else to do, and then snorted milk for 15 minutes until the burning stopped! Oh wow, note to self: don’t touch face after cutting jalapenos ever again! It’s ok, you can laugh! It’s funny now!
But aside from that, these burgers were very good and I definitely recommend them! If you are vegetarian, you can simply leave out the ground beef and just have black bean burgers (which I’d actually prefer). Jeff ate two and I had one and we have leftovers for tomorrow! I’m super excited for Black Bean Nachos tomorrow!
I topped my burger with a tablespoon of salsa and ate in an Arnold Select Multi- Grain Sandwich Thin. On the side I had more cherries and blue corn chips with sundried tomato & basil hummus

Such a great dinner!! Aside from the whole burning my nose off thing!
After dinner, I decided to finally try the Banana Soft Serve that everybody has been raving about! All I can say is I understand why everyone is so obsessed with this stuff now!

I froze 1 and 1/2 bananas earlier and then threw them in the blender (my food processor doesn’t work but the blender worked fine)


I topped mine with 2 blocks of Lindt Dark Chocolate and some Semi-Sweet Dark Chocolate Chips

Oh man! I am definitely buying bananas in bulk from now on! This was so good! I’m thinking of blending it with some PB or frozen strawberries next time.
Well I’m off to catch up on Google Reader!
