So, after I devoured an afternoon snack of Cucumber Pizzas
I decided to make some Baked Banana Donuts
I found the recipe for these on Angela’s Blog and had to make them!



I’m in a very banana-y mood lately if you couldn’t tell from the banana soft serve I made last night. I topped half of the donuts with walnuts and left the other half plain (for Jeff).


The Verdict: Jeff and I LOVE them!! Jeff has already had like 5! I must admit, I was licking my fingers while making the batter.


After making these, I had about 30 minutes before my pilates class, so I snacked on half of a Coconut Lara Bar to keep from devouring one of these yummy donuts before dinner.

Jeff ate the other half (and loved it). This was my first time trying a Lara Bar because although everybody raves about them, I was a little put off by the amount of saturated fat in them. I have to be honest, I didn’t really like this flavor or the consistency of the bar. Maybe I need to try another flavor. Any suggestions?
After my amazing pilates class (my abs are going to kill tomorrow), I whipped up Hungry Girl’s recipe for Mac & Cheese


This was a very simple recipe which only called for three ingredients:

2 cups

3 Laughing Cow Light Cheese Wedges

Family Size Bag
Ok, so the recipe actually called for Cauliflower & Cheese but the store only had broccoli. It also called for Laughing Cow Light Swiss Cheese but I already had the Light Garlic & Herb so I made some substitutions.
Four Simple Steps:
- Cook the pasta
- Heat the veggies in the microwave according to package directions (and microwave type)
- Melt cheese wedges in microwave for 30 seconds
- Mix it all together and EAT
This recipe makes 4 servings, with each serving (1 cup) coming in at 202 calories and 4.5 grams of fat, compared to Kraft which has 410 calories in a serving and 19 grams of fat!!!
In the end, my plate looks like this:

Heated up Banana Donut with small scoop of Edy’s Slow Churned Cappuccino Chip on top. YUM!

Those banana donuts look great! Maybe I’ll make those for Jamie when he gets back – bananas and donuts are his fave! Saw that HG mac n cheese and was curious about it…I’ve tried another ‘lighter version’ (ellie krieger’s recipe that uses pureed butternut squash) that was good, but totally didn’t fulfill my cheesy craving. This just might!
Maybe try the cashew cookie? I remember liking that one…but yeah, the consistency of larabars are pretty odd. Not what I expected the first time I tried one.
I agree about larabars! The first one I tried, apple pie, was good… But since then I’ve had the coconut and peanut butter cookie and wasn’t impressed.
