Don’t you love spending a night at home by yourself?
My plans for dinner fell through this evening so I made an incredible pasta dish that I dreamed up at the last minute.

I know- it looks like A LOT of food but I promise it was mostly veggies!!
What I used:
- 1 serving of thin whole wheat spaghetti measured with this amazing spoon:

This spoon has different holes in it for measuring serving sizes of spaghetti! The one at the top is 2 servings.
- Chopped Zucchini
- Chopped Grape Tomatoes
- Chopped Green & Red Peppers
- 1 Garlic Clove
- Chopped onion (about 2 tsps)
- 1 Tbsp EVOO
- 1/2 Tbsp Balsamic Vinegar
- Tbsp Feta Cheese
- Tsp Parmesan Cheese
- Black pepper, basil, oregano, crushed red pepper, to taste


Directions:
- Cook pasta according to box directions
- In a medium skillet, heat EVOO, add garlic and onion, saute until browned
- Add Zucchini, Tomatoes and Pepper
- Season with pepper, basil, and oregano, let saute for a couple minutes
- Add Balsamic Vinegar, Feta Cheese, and Parmesan Cheese, stir together
- Let sit for 1 or 2 minutes, stirring occasionally
- Remove from heat, add pasta to pan and mix

I loved making this dish for myself because Jeff doesn’t really like all the veggies I used! On the side, I had the last slice of my Veggie Pizza. Plus I drizzled EVOO and Garlic Powder over 1/2 a piece of Farmer’s Market Italian Bread, wrapped it in foil and put it in the oven for 5 minutes on 400°.
What an amazing dinner! I think I got all the veggies I need for the day in one meal!
Dessert was a repeat of last night with some cherries added in

Small piece of Bluenana Bread topped with Saratoga PB Company’s Blizzard Butter and a block and a half of Lindt Dark Chocolate. I need to get rid of the Bluenana Bread before it goes bad. I could freeze it but it tastes so good fresh. You’ll probably be seeing a lot of it in the next couple days.

that pasta looks wonderful! I have something similar planned for later this week actually.
When I’m alone for dinner I usually just graze. or make salmon cakes, since my husband hates them!
I love all those veggies!! Your definitely getting all your nutrients in!
