Hey Guys! Thanks for the happy comments on my previous post! They made me smile! So the bike ride I had planned for earlier today didn’t work out quite as I had hoped. Turns out both of the brakes on my cheap Walmart bike decided to stop working. So my long bike ride turned into a short one through my complex and to my gym instead. I did 30 minutes on the crossramp and some strength training using various machines around the gym, then biked home. Before I left for the gym I had leftover pasta from last night and a couple Jalapeno Kettle Cooked Chips from Wednesday. When I got back, I had some Feed Blueberry Almond Granola with Light Vanilla Soy Milks and Blueberries

My dinner plans took a different path as well. I had originally planned to make some raw pasta using the zuchinni I bought at the Farmer’s Market this morning but I decided to make Pancakes instead. I know, totally random.
I have been drooling over Angela’s Healthy Peanut Butter Coconut Swirl Pancakes lately and decided I wanted to try them tonight.

I pretty much followed Angela’s recipe but made a few substitutions
- I didn’t have any regular sugar in my apartment so I used Brown Cane Sugar instead
- I used Skim Milk instead of soy because I have a whole carton that I need to use up before it goes bad. I have been using soy milk for everything else
- I used Saratoga Peanut Butter Co. Blizzard Butter (white chocolate PB) instead of regular PB.
- I used a whole egg instead of an egg replacer
- I don’t have coconut oil so I just put Shredded Coconut in the Maple Syrup and also cooked it into the pancakes.

I ate these two pancakes plus half of another one and dipped them into the maple syrup/shredded coconut combo.
I bought pure maple syrup at the Farmer’s Market this morning

It was diner size!! I also had some Iced Coffee with Light Vanilla Soy Milk & Vanilla Agave Nectar.

So, what did I think about Angela’s pancakes!?
They were AMAZING. I loved them so much! I especially loved the coconut maple syrup (even though I didn’t have coconut oil). Jeff liked them too!
Changes I’ll make for next time:
- I’ll mix the PB/Applesauce right into the batter. Not because I don’t love the swirl idea but I’ll leave the swirling up to Angela. She’s better at it anyway!
- I’ll use regular PB. I loved the way the Blizzard Butter tasted in the pancakes but I want to try regular PB too
- I’ll use regular sugar if I have it. The Brown Sugar did work pretty well though so I’m not too concerned.
After dinner, Jeff and I decided to check out the Emack & Bolio’s that just opened down the street from us. We fell in love with this place in Boston. We went twice while we were there! Lauren from Healthy Delicious kindly informed me that they had just opened a store in Albany! So, of course, we had to go there!

I like the inside of this shop better than the one in Boston because there is more space.

There was also live music!! I ordered a scoop of the Oreo Frozen Yogurt

I really wish they wouldn’t call this a scoop. It’s more like three. Does that bother anyone else or is it just me? I ate the whole top portion and threw the rest out. Jeff ordered the Oreo ice cream which I thought was kind of funny since we basically ordered the same thing.
When we got home, I remembered about the French Vanilla Tea I bought in a gift shop in Boston!

It was yummy.
Now, I’m blogging from bed and am about to go to sleep. I am driving to my parents’ house tomorrow to stay for 2 weeks to work at my office job (<– See my FAQ Page if you’re curious as to what I am talking about). I will continue posting as normally as possible. I will most likely post right after work and then again at night.

HI! I just found your blog – it’s so cute! Love it! And yes, portion size in America bothers me….not with just frozen yogurt…with everything! Just tonight I went out to dinner and my portion was enough to probably feed three people. Ick.

I’ve always been a cookies and cream kind of gal, but if were to go “simple” it’s vanilla all the way.

Emack & Bolio’s is my favorite place for real ice cream too! I tried making an altered version of the pancakes myself yesterday, but didn’t have as much luck.
