Pilates kicked my butt tonight! That’s what I get for not going to a class for two weeks. I thought my abs were going to explode.
As promised, I sat around and did absolutely nothing productive today (aside from going to spinning and pilates) Classes start on Monday so I felt entitled to a day of laziness. I did have some pretty awesome snacks throughout the day. Starting with some Stonyfield Organic Yogurt

I LOVED this flavor! It’s probably my new favorite one.
My pilates class was at 7 and I knew I wasn’t going to eat dinner until after so at around 6:00, I pulled out one of these:

I decided to give the Coconut Cream Pie flavor another try and I’m glad I did because I liked it ten times better the second time around. I think it’s because I kept it in my fridge so it was nice and cool when I bit into it. LARABARs have really grown on me. I went from not liking them at all to loving them! So you can imagine my excitement when I came back to my apartment from my parents’ house and found these waiting for me:

I am so excited to try out the new flavors along with some older ones that I have yet to try! I’ll be reviewing these on the blog for the next couple weeks. Thanks LARABAR!!
Dinner tonight took quite some time to make but the result was so yummy! Before I left for pilates I prepared an Eating Well recipe for Classic Spaghetti and Meatballs.


I followed the recipe almost exactly except for the following things:
- I used 8 ounces of 90% ground beef instead of half turkey sausage/half ground beef
- I did not add bulgur or water
- I used half of a chopped onion instead of a whole one
- I used 2/3 cup WW breadcrumbs instead of 1 cup
- I used 2 eggs instead of egg whites
- I used 2 cups of Classico Cabernet Marinara instead of 4 cups ( I used one whole jar)

I also did not have a rack, so I baked the meatballs on a baking sheet turning once halfway through. I loved that the meatballs were baked and not fried!

With the changes I made, the recipe yielded 17 one inch meatballs. Needless to say, Jeff and I have plenty of leftovers. I ate 3 meatballs with a serving of WW Spaghetti. I also toasted half of an Arnold multi grain sandwich thin and topped it with a sprinkle of garlic powder (not pictured).

Right now, I am blogging from bed. I plan to go to sleep right after I hit publish. As I mentioned before, I have a job interview tomorrow at 3:30. Can you guess where?

You are one lucky girl with all those larabars!!! I would be in larabar heaven!!!!!!!!!!!! And I have GOT to find that yogurt…I haven’t been able to track down that flavor but it looks amazing.

I thought I was the only one who kept Lara bars in the fridge! So much better that way. They’ve grown on me too…the PBJ and cashew cookie are the best IMO. Enjoy
