Meet my nephew, Nicholas:


And that’s my brother, Adam. He’s a dad. I’m an aunt. WEIRD!
My interview at Lindt went swimmingly. I made sure to mention how much I LOVE dark chocolate and that I blog about them from time to time.
Before I left I made an amazing sandwich with leftover meatballs for lunch.

I chopped up 3 of the leftover meatballs and put them on an Arnold Select multi-grain sandwich thin. Then, I sprinkled on a bit of shredded skim mozzarella and heated it under the broiler for about 3 minutes. YUM! I also had grapes on the side.
I decided to try some coconut M&Ms for dessert.

I had the above amount times 2.
They were yummy!
My snacks for the afternoon looked like this:

Oh man! Favorite Larabar alert!! I pulled this flavor out of the assortment that Larabar sent me to try. I couldn’t believe how much it tasted like a PB&J sandwich. I’m definitely buying this one in bulk! (p.s. If you haven’t already, check out the Larabar blog- I’m featured as fan of the day today!!)
Jeff and I made a very summer-like dinner tonight in honor of the unofficial last week of summer. Our classes start on Monday so one last summery meal was necessary

I bought a sweet potato at the store the other day and knew immediately that I was going to make Sweet Potato Fries with it.

I simply rolled them around in a mixture of 2 Tsp Canola Oil, 1/4 Tsp Salt, and a pinch of black pepper and put them in the oven for 20 minutes at 450° turning them over once halfway through.
While I was doing that, Jeff made these:

He also boiled some corn on the cob

I had one hot dog on a toasted Arnold Select multi-grain sandwich thin. Don’t let the picture deceive you- I did not eat that much ketchup. The bottle kind of exploded on my plate. I wiped a lot of it off. I also didn’t eat that many sweet potato fries- I ate more!
Twas a very yummy, summery dinner.
My dessert idea came to me while I was folding laundry after dinner.

Oh my yum! This was a banana cut open and slathered with Blizzard Butter (white chocolate PB), sprinkled with shredded coconut, topped with a few semi-sweet dark chocolate chips and put under the broiler for 1 minute. I added a scoop of Edy’s Slow Churned Cappacino Chip and licked the plate clean. This was so good!
Now, I’m off to prepare Alison’s Chocolate Overnight Oats and then it’s bedtime for me! My brother and his fiancee, Angela, are coming up to visit tomorrow! Can’t wait! See ya in the morning!

I love adding dried fruit to my overnight oats so that it is slightly soft and slightly chewy. Almond butter is a good last minute addition too, then I eat it all cold.

Overnight oats- mashed banana seems popular right now! I like Greek yogurt, blueberries (frozen, so when they thaw they turn the bowl purple!), vanilla extract…topped with coconut/almond butter
