When my brother called to tell me he was going to be late today, I knew just what I was going to do with my spare time: Make Veggie Girl’s Pumpkin-Banana Trail Mix Muffins (minus the trail mix)

I followed her recipe almost exactly except for the following things:
- The obvious: I didn’t use trail mix. Jeff doesn’t like nuts baked into things and I didn’t have any on hand anyway.
- 1 used 1 cup all purpose flour and 1 cup Whole Wheat flour instead of 2 cups all purpose flour
- I used organic sugar from the bulk bins at the food co-op instead of the kind Veggie Girl used
- I used a few splashes of light vanilla soy milk for my non-dairy milk
- I used a 13 ounce can of pumpkin instead of 15 ounces because that’s all I could find at the store. (13 ounces was more than enough- I had leftover batter)

After a tasting a few licks of the batter, I could tell that I’m going to love these. They’re baking in the oven as we speak!

For lunch, I had another amazing WW bagel sandwich

What I used:
- 1 Thomas WW Bagel, toasted
- I slice of deli turkey
- 3 slices of tomato
- A couple slices of orange pepper
- Shredded skim mozzarella
I popped it into the toaster oven for a couple minutes and then devoured it with a side of grapes

While baking the muffins, I snacked on some of these:

with apple butter

And now my brother and his fiancee are here and the muffins are done!

Fav thing to bake is tarts…because they are so easy yet so impressive!
I love to bake…almost anything. I enjoy baking so much that I was put on a “baking ingredient budget” by my fiance! My newest quest has been to healthify my creations.
Oh muffins! I’ve never baked them, they must be amazing, seem so healthy.
I like baking bread, cookies and cakes (actually sweet breads like poppy seed bread or pain d’epice..). Easy things.
I’m not sure what my favorite thing to bake is. I guess it depends on the season.
