Let me begin this post by stating that if you’ve never tried a breakfast cookie, stop reading right now and go make yourself one. My Fitnessista-inspired breakfast cookie this morning was AWESOME! Here’s the pic again (in case you missed it)

I knew when I got back from spinning this morning that I would not get to class on time if I opened my laptop, so I didn’t. Instead, I took the world’s fastest shower, devoured my breakfast cookie, and hightailed it to class. I actually ended up getting there early but I’d rather be early than late. I could tell I was going to love the class as soon as I sat down. It’s called Studies in Writing about Texts and the theme is Fairy Tales! This is my text book:

The Professor was witty and fun and best of all, she told us that the class is going to be mainly online. We’re supposed to meet three times a week and instead we’re only meeting once! I was SO EXCITED when I heard that because it means that I don’t have to rush so much when I get out of spinning! HUZZAH!!
Spinning was excellent today. The instructor was so much fun!! She was dancing and yelling and although she was really tough, she kept the class motivated.
I got home from class today had a fun surprise in the mail!

I signed up for a sample of these on the Somersault Website back in July and forgot completely about them! Since I was craving a snack, I ripped them open as soon as I saw them. I got the S.S. Sea Salt Flavor which is made with toasted sunflower seeds, Sesame Seeds,Wheat Flour and Sea Salt. It was a good snack but I don’t think I’ll buy this flavor. I’d much rather get the cocoa ones.
For lunch, I pulled out the George Foreman and made a wonderful Mediterranean Panini

I topped an Arnold multi-grain sandwich thin with hummus, feta, orange bell peppers, and tomatoes and pressed it in the grill for two minutes. Mmmm Melty! I had some grapes on the side.
After lunch, I read Little Red Riding Hood for class and then caught up on google reader. I was super excited when I pulled up Heather’s post and saw that I won her giveaway!! It’s the first giveaway I’ve won so I was really happy! Plus I’m really excited to try Jay Robb’s rice protein since I’ve never had protein powder before. In my excitement, I accidentally closed out of my internet browser and restarted my computer! I’m so ridiculous!
At around 4, I was craving chocolate so I grabbed a Larabar out of the stash they sent me
This wasn’t my favorite flavor. The cocoa powder was a bit much for me but it definitely satisfied my chocolate craving.
I decided to whip up some of Jenna’s Pizza Dough for dinner tonight

Sorry for the blurry, not so pretty pics! I’m getting a new camera very soon for my photojournalism class!
Jeff’s pizza was topped with organic pizza sauce and cheese and mine was topped with:
- Organic Pizza Sauce
- Around 1/4 cup of part-skim shredded Mozzarella
- Feta Crumbles (handful)
- Sliced Tomato
- Chopped Orange Bell Pepper
- Chopped Garlic
- Chopped Onion
- Italian Seasoning (basil, oregano, etc.)
- Small amount of Crushed Red Pepper

I ate the above + 1/2 of another slice. I can’t get over how good this pizza dough is! If you want to make your own pizza dough, definitely use Jenna’s recipe.
For dessert, I made an Ice Cream Sundae (minus the ice cream)

In the bowl:
- Blueberries
- 1/2 frozen Banana
- 2 spoons Plain Chobani
- 1/2 spoon Blizzard Butter (white chocolate pb)
- A few Dark Chocolate Chips
- 1 Newman-O
It was the perfect end to a fun day!
Sorry this post got so long. I have two classes tomorrow but I’m going to try to do a couple short posts instead of a huge one!
Is anybody else super excited for a Pumpkin Spice Latte from Starbucks tomorrow?!
