Morning all! Today is my first day of classes! Technically, it’s my first day of class because I only have one today. I was in bed by 8:00pm last night and sleeping before 10:00! I was tired from my long day of doing nothing.
For dinner last night, I relied on my good friend, Annie

I sauteed some orange bell peppers and tomatoes to add to the mix

and also added some broccoli

Remix:

Twas yummy. For dessert, I had three of these:

And then prepared a breakfast cookie for this morning

What I used:
- 1/3 cup Quaker Oats
- TBSP Organic PB
- 1/8 cup Light Vanilla Soy Milk
- 1/2 smashed banana
- Handful of Blueberries
- Smaller handful of Dark Chocolate Chips
- Pinch Flax
- Pinch Shredded Coconut
The Finished Product:

I plan to devour this with a bit of plain Chobani on top when I get back from spinning at 10:30 and then it’s off to class for me!
Right now, I am fueling for spin class with this:

I toasted a Pumpkin-Banana Muffin in the toaster oven and topped it with cinnamon. I only ate half.

Rebecca, hard boiled eggs are always a good thing to have around. I keep them a couple in the fridge, easy to throw on a piece of tasty toast – no need to warm anything up.

What a totally great way to make Mac & Cheese tastier and healthier too. I hope your breakfast cookie turned out – chocolate chips would have me zipping back home to devour it STAT!
