Happy Weekend! I’m so glad that it’s finally here. How about you? I’ve decided that Friday is going to be my day to relax. I didn’t have to go into class this morning so I didn’t set my alarm and slept until 7. I was having stomach problems when I woke up this morning so I decided to skip my 8:30 Spinning Class. I wasn’t really hungry for breakfast but knew I should eat something so Jeff scrambled me an egg. I paired it with a slice of WW Toast and some blueberries

After breakfast, I crawled back into bed to get some reading done for my Literary Journalism class. I’m reading In Cold Blood by Truman Capote and though it was slow at first, now I can’t put it down! I got hungry for a snack at around 10:00 so I had a pear

I was supposed to go to lunch with my friend, Maureen, but something came up at the last minute and we had to reschedule. Jeff agreed to be my lunch date instead. We went to Subway and I ordered a 6″ Veggie Delite on Honey Oat (minus the onions and olives)

We also shared a bag of Spicy Chiptole Sunchips (the following is an image I found on google because I forgot my camera)

These were awesome!! I really liked the flavor.
After lunch, we headed to the mall to walk around for a bit. I was really craving a cookie for Cookie Friday so we stopped by Starbucks and shared a Chocolate Chunk Cookie (another google photo)

I also enjoyed a Tall Sugar Free Vanilla Iced Coffee with Skim Milk (yet another google photo and a small one at that!)

I was checking out cameras in Best Buy today and will soon be the owner of brand new one! In case you didn’t know, I currently use my cell phone to take pictures (pretty lame, I know!) I did have a pretty pink digital camera but I dropped it on its lens back in March. Let’s just say I was having a bit too much fun at my birthday party… MOVING ON…
When we got home, I popped this dvd into the dvd player

I got this in the mail yesterday but didn’t open it until today. I did Level 1 and it was awesome! My abs will be sore tomorrow but I really enjoyed the workout.
Jeff and I declared tonight Stay-In Date Night. I made us an absolutely delicious dinner which consisted of Whole Wheat Mini Pasta Shells and Cheese (plus a ton of other yummy ingredients)

What I used:
- Whole Wheat Mini Pasta Shells
- 1 jar of Classico Spicy Tomato & Basil Pasta Sauce
- 1 Carrot, chopped in veggie chopper
- 1/4 cup onion, chopped in veggie chopper
- 1 Slice WW Bread, crust removed and processed into breadcrumbs
- Spoonful of Flax
- Italian Seasoning Blend (oregano, basil, etc.)
- Black Pepper, to taste
- Garlic Powder (out of fresh garlic)
- 1/3 cup Shredded Part Skim Mozzarella
- 1/8 Cup Parmesan Cheese
- Broccoli

Directions:
- Cook Pasta
- Saute Carrots, Onions, and Garlic in a pan with a TBSP of EVOO, add broccoli, seasoning, and jar of sauce, let simmer until hot.
- When Pasta is done, spoon a layer of sauce onto the bottom of a baking dish, mix the pasta with the remaining sauce and pour into dish.
- Mix Breadcrumbs, Flax, Garlic Powder, and Seasoning in a bowl and then pour on top of pasta. Then sprinkle on the cheese
- Bake in oven for 20 minutes at 325°F or until top cheese is melted and bread crumb mixture is toasted
- Enjoy!

I had a salad made up of Baby Spinach and Tomatoes on the side. Don’t worry, I went back for another scoop of pasta too!
This dish was so yummy and so easy to make! I’ll definitely make it again.
Jeff and I walked to the video store after dinner and rented Coraline. We also stopped by the grocery store for some of this:

I’m off to enjoy my date night with Jeff and to eat some ice cream!!

I heated up a Deep Chocolate Vitatop from the samples that Vitalicious sent me and added a scoop of ice cream on top. This. Was. AMAZING. It tasted like a brownie sundae! OMG YUM! Go order some Vitatops RIGHT NOW!

Those sun chips are so yummy. I love them, but don’t buy them often. Your little pear gadget is so cool. Kitchen gadgets makes me happy. How was the movie? I watched Caroline at the theaters and thought it was pretty good. I liked the animation.
Those are my new favorite chips at Subway. I used to get the Southwestern Ranch or Harvest cheddar sunchips but I love the slightly spicy flavor these ones have

My fave way to spend a Friday night is relaxing with a book, going to a movie, or hanging out at a coffee shop. I don’t really like bars or clubs, so my weekends are pretty tame!

Those Vita-tops look amazing….reminds me of another low fat treat I love, have you ever tried No Pudge brownies? They are a fat free mix (just add applesauce, yogurt, or tofu) and they have a few different flavors
