I made it! I got through all 106 posts piled up in my google reader. I woke up at 6:30 this morning to catch up. I know- I’m crazy but a blogger’s gotta do what a blogger’s gotta do, right? Right.

Yesterday morning, I woke up and did level 1 of the 30 day shred instead of going to the gym. I had a lot of reading to so for school and staying at home to work out saved so much time. I had a piece of WW Toast with PB to fuel for my workout. I have to say, that after my third time of doing the shred, I’ve only felt like I was going to die twice. Yesterday, most of the push up session was spent sprawled out on the floor. I’m a total wimp when it comes to push ups. Are you?
After completing the shred, I made this delicious bowl of oats

What’s inside:
- 1/2 cup Quaker Quick Oats
- 1/2 cup Light Vanilla Soy Milk
- 1/2 cup water
- 1 sliced banana
- Pinch shredded coconut
- Pinch flax
What’s on top:
- Blueberries
- Spoonful Organic PB
Yum!
Tuesday is my long day at school. I have classes from 10:15 to 4:05 so I packed a lunch to take with me.

- AB & Banana on Wheat
- Stonyfield Cherry Vanilla Yogurt
I ate the yogurt during my Literary Journalism class and the sandwich before my Advanced News Writing & Reporting class. However, since the professor of my second Journalism class is crazy (He’s 77 and was the editor of many papers: NY Times included), he let us leave 5 minutes after we got into class!! It’s supposed to be a 3 hour class! I’m not complaining! I’m happy I got to leave early!
When I got home, I snacked on some Blue Corn Chips & Salsa (no pic because I fail) and then went Grocery Shopping with Jeff!
We decided to make Turkey Chili for dinner. I wanted to recreate the meal I had at my brother’s house the other day because it was so good.

I used Chunky Two-Bean & Beef Chili recipe from Cooking Light but obviously changed a few things.
- I used 1 lb Ground Turkey not beef
- Forgot the Jalapenos (didn’t want this to happen again anyway)
- Used two cans of Organic Chili Beans (mix of pinto, black, and kidney)
- Used 2 TBSP regular Chili Powder
- Used way more than Half cup of Green Pepper
And what’s Chili without cornbread?

Here are the substitutions I made with this mix:
- Canola Oil instead of Butter/Vegetable Oil
- Skim Milk instead of 2%
I also made Brown Rice to go with the Chili.

There’s brown rice under there somewhere! This recipe was awesome and we have leftovers to last us a week!
For dessert? You guessed it! Another piece of my Red Velvet Cupcake
Only I cut that piece in half and shared it with Jeff.
Now, I’m fueling for a spinning class with a piece of WW Toast with PB and a glass of Iced Coffee. I have a Breakfast Cookie waiting in the fridge for me after my spin class made of:
- 1/3 cup oats
- 1 TBSP Almond Butter
- 1/2 Smashed Banana
- A few Dark Chocolate Chips
- Pinch Shredded Coconut
- Pinch Flax
- Drizzle Vanilla Agave
- Pinch Cinnamon
Can’t wait!
I only have one class today but I have a load of reading to do afterward (Barnes & Noble here I come!). Plus, I have an interview tonight. Wish me luck!!
I think a Pumpkin Spice Latte is in my future.

The thought of spin is so exciting to me but all the horror stories of sore hineys scares the bejeezsus out of me. I know my local Y has a drop in class but I’m still scared. I have to sit for my job and need my hiney to do so.
But I love your dinner. I don’t normally add rice to mine. I just make bean chili in the crock pot and we eat it for days. In fact I just finished up the last batch for lunch yesterday and would make it again if we weren’t going out of town soon.
I have never had a sore hiney from spinning. I hear that all the time too but it’s never happened to me! Don’t be scared! Do it! It’s so much fun and an amazing work out!
How was the cornbread? I recently made their Whole Wheat Blueberry Muffins (which I did a product review on) and they were terrible. Curious if the Cornbread might be better.
The cornbread was ok. Nothing special- it served its purpose!
I love push ups!! They make me feel so strong! That cornbread looks fantastic

Oh my gosh, you are so disciplined with that cupcake! Self control is your talent!!!! I admire you! haha–it would of been gone in 30 seconds if that cupcake had been in front of me.
