Hiya! Sorry I didn’t post last night. Jeff and I went out to dinner and when we got home I got in bed to rest for a few minutes and well, you know what happens when you lay down to rest for a few minutes, don’t you?
I am skipping the gym today because I’m a girl and once a month it just has to happen, ya know?
I did just eat a delicious plum so that sort of makes up for the gym thing, right?

I think it does.
I was in Breakfast Cookie Heaven yesterday morning

In case you miss the ingredients in my last post, this baby was made up of:
- 1/3 cup oats
- 1/8 cup light vanilla soy milk
- TBSP Almond Butter
- A few Dark Chocolate Chips
- Pinch of Cinnamon
- Pinch of Shredded Coconut
- Pinch of Flax
- Drizzle of Vanilla Agave
Breakfast Cookies save my life on a regular basis. Yesterday morning, as I was scurrying around after my spin class trying to get ready to go to school, all I had to do was pull my cookie out of the fridge, top it with plain Chobani, and devour it. Tons of time saved and my mouth was extremely happy.
I had loads of reading for school to do yesterday so after class, I headed home for a quick lunch and then straight back out to Barnes & Noble. Lunch was broken into parts, the first being Olive Food Should Taste Good Chips and Hummus

Followed by a peach

Some Dark Chocolate, of course

A Tall Nonfat Pumpkin Spice Latte (does this qualify as a lunch item?)

I got an awesome Pumpkin Spice Latte Bookmark too. Don’t be jealous.
And finally rounded out my 5 part, all day lunch with a Stonyfield Pomegranate Berry Yogurt (Yum x 6)

After spending a few hours skimming reading articles at B&N, I headed home to get ready for my interview at 6. I know I’ve said this about ALL of my interviews, but this one went extremely well. Cross your fingers that I get the job because I need it to pay for food rent. Before my interview, I snacked on a small bowl of Kashi Island Vanilla Cereal with light vanilla soy milk

Jeff and I decided to go to a diner for dinner. The main reason we chose a diner is because it’s the only place where breakfast is served all day and if you’ve been reading for a while, you’ll know that I love breakfast!
I ordered a Spinach, Tomato, & Feta Egg White Omelet which came with Dry Wheat Toast and Home Fries.

It was humongous! I ate about half of each item on my plate. The home fries weren’t that good and my stomach was mad at me afterward. From now on, I’m only splurging on home fries I know are good. My stomach really hates greasy foods.
After dinner, we wanted ice cream so we stopped by Emack & Bolio’s for a scoop of Chocolate PB Cup to share

The ice cream had big chunks of PB in it and was really yummy!
As I mentioned at the beginning of this post, when we got home, I passed out and slept until 6:30 this morning.
Today’s To-Do List:
- Google Reader (55 posts)
- Breakfast (I’m thinking Cinnamon Raisin Bagel with an egg on top- yum)
- Class from 10:15-1:05
- Reading for class (probably at B&N again)
- Level 1 of 30 Day Shred (maybe)
- Blogging (hopefully I won’t pass out again!)

I love diner food. This one place here has the best biscuits…they put them on the griddle for just a minute to toast them up. Yum. I love omelettes, too.
My favorite diner food is total breakfast. I loved to go to the one near my seminary and order an eggwhite omelette with spinach and feta with dry rye toast and no homefries. Occassionally I’d have their whole wheat pancakes with honey or fruit. And on an extremely rare occassion that I didn’t want breakfast they made these awesome panini’s with prosciutto, mozz, and roasted red pepper. They had several other varieties I liked too like brie and mixed berry jam. I’m drooling now
Have you tried the Lime “Food Should Taste Good” chips? Used them last night to make some “healthified” nachos, SUPER tasty. Heating the chips really brings out the lime flavor.
BTW – good luck with the semester!!!

I’m totally jealous of that bookmark! I was at starbucks yesterday and saw the pumpkin spice latte! This makes me feel very cool and hip because 1) I saw it at starbucks before I saw them on blogs and 2) I never go to starbucks because hauling two kids out of the car for coffee is just not worth it, thus feeling very and cool and hip when I was there without children.
My favorite diner food? Probably PANCAKES or grilled cheese and tomato with fries! OK now I’m hungry.
