Note to Self: Stay away from intercom when taking off shoes….
When I got home from classes today, I bent down to take off my shoes. I was on my way back up when WHAM! The top of my head met the corner of my intercom. Blood and dizziness occurred, but I’m ok now.
This morning, I was craving an egg sandwich so that’s exactly what I had.

I cracked one egg in a pan and topped it with reduced fat cheddar, basil, pepper, and Frank’s Red Hot. Then I toasted a Thomas’ Cinnamon Raisin Bagel and put the egg on top. I had a kiwi and a glass of Iced Coffee with light vanilla soy milk on the side. So Yummy!
During class, I had half of a PB Cookie Larabar to hold me over till lunch. I didn’t take a picture because…well…I was in class.
Lunch consisted of leftover Turkey Chili. I topped some TJ’s Blue Corn Chips with Chili + Hummus and popped it in the microwave for 1 minute

With a piece of cornbread on the side. (I turned up the contrast on this pic for fun!)
After lunch, I was sitting on my couch with a bag of frozen carrots on my head when Jeff walked in carrying a huge box addressed to me. I almost exploded when I opened it!

Sally from Newman’s Own Organics was kind enough to send me a box of products to try out. Jeff and I were amazed by all the awesome goodies in the box. I am super excited to try everything. Thanks Sally!
When I got hungry for a snack, Jeff and I broke open the bag of Honey Wheat Mini Pretzels

I portioned out a serving to prevent from eating the whole bag in one sitting

These little guys were so good! Jeff is a big pretzel fan and he liked them a lot too. They were the perfect salty/sweet combination. I would definitely buy them at the store.
Dinner was simple. I filled a Garden Spinach Flat Out wrap with Tomatoes, Mozzarella, Hummus, Baby Spinach, Basil, and Pepper and heated it in the George Foreman for a couple minutes

I had an apple on the side

This was an awesome and easy dinner.
Some of you commented that you were surprised the my cupcake was still around. Well, guess what I had for dessert?

I split the last part of my cupcake with Jeff tonight. I’m sad to see it go but I didn’t lie when I told you it was going to last me all week, did I?
I made up for hitting my head with delicious eats all day long. Needless to say, I did not do Level 1 of the shred today because of my head. I don’t have class tomorrow and I am totally exhausted so tomorrow is my catch up on sleep day. I’ll still be going to the gym but probably later than usual.
There was a fed ex slip on my mail box today telling me that I missed a package. It should be coming tomorrow instead. Let’s try to guess what it is! (Hint: I didn’t order anything so it must be a product sample)

Hmm I’ve never ventured into chili with hummus, but that looks delicious!
Wowee–that must of hurt–I do that stuff all the time. For some reason, I always hit my hip bones on the counter…and that hurts like the dickens! haha I am a clutz to the extreme.

Ouchie! We have a low overhang in part of our stair well and I’ve hit my head on it when not paying attention. It smarts bad :0(
Those samplers are awesome. Sometimes I get jealous of you food bloggers who get samples but then I remind myself I would eat them all too quickly so it’s better I don’t get them.
BTW Congrats on making that cupcake last all week. To me a cupcake is single serving sized not matter if its mini or Jumbo. It would have been gone in a few bites

Newman’s are TASTY, those products that I have tried. Paul Newman’s mission with the food line, makes him and his legacy all the more cool. They don’t make them like him anymore….

Sorry about your head!! For an unknown reason, there’s a towel bar in my shower and I hit my head on it all the time, and it even gave me a nice goose egg on my forehead once!
