Hey Guys! I am going to pretend that Sunday didn’t exist for this post and here’s why:
- I woke up at 7 this morning
- Spin Class
- Grocery Store
- Work 1-5:30
- Shopping for work clothes
- Homework
Combine all of that together and you have one tired blogger. SO, since most of my Sunday eats weren’t that amazing anyway, let’s pretend that they didn’t happen. I will, however, share the details of the awesome dinner I made last night at this end of this post.
I started my morning off with a bowl of Brownie Oats

What’s inside:
- 1/2 cup quick oats
- 1/2 cup light vanilla soy milk
- 1/2 cup water
- 1/8 tsp cinnamon
- 1 banana, smashed
- pinch of flax
What’s on top:
- crumbled chocolate fig vitatop
- spoonful of raw almond butter
Ahmazing!
Since I had work from 1-5:30, I packed my lunch

- Food Should Taste Good Multigrain Chips with Sabra Hummus (in the container)
- Pomegranate Chobani
- Mcintosh Apple
Three things to say about this lunch:
- Sabra hummus is the best hummus ever
- I love, love, LOVE Mcintosh Apples
- I HATED the Pomegranate Chobani (you win some, you lose some)
I had a little PB filled milk chocolate pumpkin for dessert

I couldn’t resist buying two of these guys at the Apple Fest.
Dinner was leftovers from the fabulous dinner I made last night

What’s this, you ask?
Baked Cinnamon-Sugar BBQ Chicken with Apples & Sweet Potatoes
Note: I did not use a recipe. I just threw in what I thought would taste good. Feel free to make all the changes you want!
Chicken Marinade
- 1/3 cup BBQ Sauce (I used the kind we got at the Apple Festival on Saturday)
- 1/4 tsp Granulated Brown Sugar
- Cinnamon and Black Pepper, to taste

Chicken, Sweet Potato & Apples
- 4 Boneless, Skinless Chicken Breasts
- 1 Mcintosh Apple, thinly sliced
- 1 Large Sweet Potato, sliced
- TBSP Packed Brown Sugar
- Cinnamon, to taste

Instructions:
- Mix marinade ingredients together, coat chicken, and let sit in fridge for at least 30 minutes
- Preheat oven to 350° and coat baking pan with cooking spray
- Border the edge of pan with potato and apple slices and sprinkle with cinnamon and brown sugar
- Add chicken to the middle, bake covered for 20 minutes, and then uncover and bake for an additional 20 minutes

Considering I didn’t use a recipe, this dish was pretty awesome! I heated up some butternut squash on the side

And of course, last night I had a bowl of pumpkin ice cream for dessert to round out my very autumnish meal.
Tonight, I had two blocks of dark chocolate for dessert.

Update: Tuesday Night (9:44) Hey Guys! I am heading to bed after a long day of class from 10-4, studying, and dinner out with Jeff. I caught up on Google Reader though! I promise to post tomorrow!! For me soup and oatmeal equal fall. I just love the warmth in my stomach. I have tons of crock pot soup recipes to use this winter between now and Christmas with how busy we are. I love to smell it cooking when I get home and eat almost immediately
i love soup and stews. with nice crusty whole grain bread. i like it super duper hot too!
my fave fall meal is pumpkin polenta with chorizo (on my blog if you haven;t seen it yet) Its AWESOME.
