Hiya! It’s a rainy, rainy day here in Albany and I have a very BUSY day ahead of me. For some reason, I am psyched for it, rather than dreading it.
Today’s schedule looks like this:
9:30-10:15: Spin Class
10:20-10:45: Home, Shower, Breakfast
11:30-12:25: English Class
1:00-6:00: Work
7:00-8:00: Pilates
8:00-10:00: Dinner, Homework
I’m not too stressed out about it because I know the day will be over before I know it!
That being said, let’s do a recap of yesterday’s eats, shall we?
I skipped my workout yesterday morning because I needed to be on campus early.
For breakfast, I pulled a box of Kashi Honey Oat Waffles out of my freezer

This was my first time trying Kashi waffles (I usually eat Vans). I saw the Honey Oat variety on a blog last week and wanted to try them. I topped them with TJs Maple-Agave Blend and Sliced Banana. I liked the flavor overall but I didn’t like how soft they were. Maybe I need to toast them longer.
Confession: I drank far too much coffee yesterday (and didn’t take any pictures for some reason!?)
Here’s my coffee rundown:
- 1 cup of homemade iced coffee with light vanilla soy milk (really two 1/2 cups)
- 1 small cup of Harvest Blend and a splash of Southern Pecan Green Mountain coffee from my school’s cafe with skim milk
- 1 small nonfat latte with a pump of cinnamon swirl syrup from Seattle’s Best in Borders
AHH and there was NO REASON FOR IT other than I was really craving coffee! I didn’t even need the caffeine. Do you crave coffee or caffeine? I crave the taste of coffee (I used to hate it!)
Anyway, my lunch was packed because I had a long day on campus (9:30-4)

- Almond Butter & Carrot on a Garden Spinach Flat Out Wrap
- Vanilla Chobani
- Newman’s Own Organics Mini Pretzels
I only ate half the wrap and didn’t even end up eating the chobani because my Literary Journalism professor brought in homemade Carrot Cake Cupcakes (unfrosted) and I had to have one. They were so yummy. I did eat the pretzels and later, I met Jeff at the Student Center and got Garden Vegetable Soup from Au Bon Pain. I’ll admit I ate more of the WW Roll dipped in the soup than I did of the soup.
After my classes were over, Jeff and I decided to go to Borders to do some studying. I received a BOGO coupon for Uno Chicago Grill, and we decided to go there for dinner. They had a special fall themed menu

I ordered the Harvest Vegetable Flatbread Pizza (the description is on the menu above)

It was so good. All the flavors mixed really well together. I ate 3 pieces and am going to eat the leftovers for dinner tonight. Yum!
Dessert was 2 unpictured blocks of Dark Chocolate.
Last night, I prepared a Breakfast Cookie to eat when I get back from my Spin Class

Can’t wait to eat it!!
Well that’s all for right now!
How do you manage very busy days? How do you de-stress?
Have a great Wednesday!!

mmm….i see a kabocha soup on that menu
makes me wish we had that restaurant here!
Busy days…I just try to get the stuff done that NEEDS to be done and be where I need to be. Anything extra can be done later and I try not to stress if I don’t get something done if it’s a busier day than normal.
Heya! What a busy day! It does sound pretty fun though
Go you for taking two classes in one day! Both sound like a good time though. Hope you enjoy your breakfast cookie. (and your day!)
I actually like busy days
I don’t like being bored.
I would definitely go for that kabocha soup! Kabocha = favorite food ever.
I usually crave the taste of the coffee and not the caffeine. In fact I often order it decaf.
For a long day I destress with either yoga or some tv. Lately it’s been old episodes of LOST and lots of water or tea.
Too much coffee?! That’s crazy talk
I drink coffee for the taste – caffeine doesn’t have a big effect on me. That veggie flatbread pizza looks really good! Hope today wasn’t too brutal!
I’m super impressed you are doing Spin Class + Pilates! Awesome!
I wind down with a book – I have to turn off technology to wind down. lol
That’s too much coffee? Girl, that’s nothing…I had five extra large cups today with half-and-half. Hee hee hee! But I can fall right asleep after a huge cup, though. Guess I’m immune to them now…
2 workouts in one day! you get em’ girl. maybe try drinking decaf coffee if its only the taste you crave?
I love the taste of coffee (esp. flavors like pumpkin spice, yummmm) so I often make myself a decaf version!
I cannot believe that I’ve still never tried (or been able to find) kabocha squash yet a freaking chain restaurant carries it.. wtf?!!? Why does it continue to be so evasive…….
