Yes, I had an Apple Cider Donut for lunch. Gotta problem with that?
Then we drove to Cobleskill, NY for absolutely NO REASON.

No reason AT ALL


And if that weren’t crazy enough, we decided to drive back to Albany, get Jeff’s car (instead of mine), and drive to VERMONT for dinner. By this time, it was around 6pm and I grabbed a quick snack of blue corn chips and sabra and a spoonful of PB before we headed out again.

And a New England Bog Salad

Field Greens, Shredded Carrots, Grape Tomatoes, Crushed Walnuts, Sundried Cranberries with Maple Vinaigrette on the side
AMAZING. ABSOLUTELY AMAZING. Maybe one of the best salads I’ve ever had. The dressing was awesome. I devoured most of the salad.
Then……

PUMPKIN CHEESECAKE!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! (shared with Jeff)

hey there, Rebecca — great pictures! For your nine pounds of apples, thought I’d pass along this recipe of my mom’s. (Sorry it only uses 3 apples at most!) It is called Apple Pudding Cake, but I don’t know why because there’s no pudding.
Jodi O’Leary’s Apple Pudding Cake
preheat oven to 400%
butter a medium-sized rectangular cake pan
1. Stir all of these dry ingredients together in a bowl
1 cup sifted flour (but I’ve never sifted it)
1 tsp baking soda
1 tsp cinnamon
3/4 tsp nutmet
1/4 tsp salt
2. Cream the butter and sugar (with an electric beater is best)
1/4 cup butter (1 stick)
1 cup sugar
1 one egg*
*Add the egg in after the butter and sugar, are creamy. Then beat some more until light and fluffy.
3. Grate 2 large or 3 medium tart apples and fold into egg mixture.
Use unpeeled apples.
4. Add flour mixture into egg and apple mixture and stir until just mixed.
5. Pour into buttered pan and bake for 20-30 mins at 400 degrees.
6. Serve warm with whipped cream. Also good when it cools off.
