Ohhh, Hello blog world! You are my stress relief for the day! I’ve done so much today-all while sitting on my couch. I didn’t go to the gym this morning because I woke up and it looked like this outside:
Ok, I lied. It didn’t look like that but it was close…no it wasn’t. Truth is I forgot to take a picture. We got around 6 inches and I definitely did not want to go outside at all.
So, I worked on finals all day. I’m not even exaggerating. I’ve been doing school work since 9:30 this morning. I have no idea where the day went!
Oh well, I was nice and cozy inside all day.
Did you get snow today too?
Anyway, the only interesting thing I have to report about is this aweseme mac & cheese I made the other night for dinner.
I got the recipe out of the September Issue of Cooking Light and made the following adjustments:
- I used a mix of Whole Wheat Penne and Whole Wheat Mini Shells for fun instead of just penne
- Iused 1 cup of shredded reduced fat Cabot cheddar and 1 cup of shredded part-skim mozzarella instead of sharp cheddar.
- I only added 1/4 tsp of salt
- I did not add bacon or onions (because I didn’t have any!!)

I loved it!! It was creamy and not overly cheesy. We had broccoli on the side.
I made enough so we would have leftovers but it was too cheesy for Jeff so I’m the only one eating them! What a shame!
Other than that fantastic meal, my eats have been pretty boring. I had 2 1/2 bowls of cereal for dinner last night!!
I think I’m addicted to Newman’s Own Honey Flax Flakes. They’re so good. I’ve been eating it for snacks too!
I’ve also been devouring the cookies that Jeff and I made the other night.
They’re amazing!
I’m suffering from Uncommon Grounds withdrawal. I haven’t been there in about 2 weeks. Something must be done about this!
I have a rough draft to edit for my English class and a GenEd final on Friday and then I am DONE with school for the semester. Wish me luck!!

If I were allowed to subsist on only one food for the rest of my life, it would be macaroni and cheese.
PS. I’m from Buffalo. Snow is equal parts joyful and painful. Also: this might seem whack, but I skirted around Albany this fall on my honeymoon.
