I Date For Cookies

Tuesday Morning, I burned the crap out of egg in the hole…

…and it was FANTASTIC! I need to do that more often. I added a bit cheddar to the bread so it kind of just tasted like grilled cheese with an egg on top. Of course I drowned it in hot sauce. I also had a sliced pear on the side.

Lunch was a combination of Spaghetti with Marinara Sauce and Ricotta Pasta with Spinach from Sunday night.

And then I met Jeff for a date at the Palisades Mall. Our date was not a date in the traditional sense of the word. Since we haven’t been living together for the past month, we randomly miss seeing each other. And since we had nothing better to do with our lives, we decided to wander around the mall for three hours.

Part of our date  involved this cookie from Subway:

It’s a good thing too because I might not have gone if it didn’t. You think I have nothing better to do with my time than just go to the mall with my boyfriend? PSH. If he wants to see me, there better be a cookie involved!

After we left the mall, I headed to my brother, Adam’s, house for dinner with my mom.

And guess who I saw?

Henry!?! Of course I saw Henry!

But more importantly, I saw my nephew, Nicholas!!! (Yes- he has a blog. Click on it!)

Isn’t he the cutest baby in the world!?!?!?!???? I think so.

Anyway. my brother made Salmon Rösti from Eating Well Magazine.

While they were cooking, Adam put out some appetizers.

Pita Chips with Hummus, Olives, and Cheese and Tomato and Mozzarella Salad. Those are my kind of appetizers!

My brother always has Honest Tea in his fridge so I stole one.

I actually drank that bottle of Dawn instead…Just Kidding….Maybe….

I was in charge of making the salad.

And then we feasted! Is that even a word? We ate a lot of food!

I’m not the biggest fish fan so I only ate half of the rösti. I ate everything else on my plate.

My brother had this amazing Lemon Tarragon dressing.

He gave it to me to take home because he and Sarah don’t like it. SCORE! He also gave me a Spice Cake that made for New Year’s. He said that it was a healthy recipe so he saved it for me. I guess people just associate me with health. :-) I can’t wait to try it!

For dessert, my mom brought over a Chocolate Cream Pie (my absolute favorite pie ever!)

I had a small piece.

YUM times a million!
