Goodbye Rockland! Hello Albany!

Thank you for all of the great advice on my Vegetarian February post!! All of your tips are so helpful! If you haven’t already, check out my post and let me know if you have any tips on giving up meat! :-)

Tell me this isn’t the most amazing sandwich you’ve ever seen:

Don’t lie.

I’m drooling all over my laptop just looking at it.  On Thursday morning, I decided to grill a peanut butter, banana, and cinnamon sandwich Peanut Butter & Co style.  It. Was. Fabulous. Try it- I promise you will not be disappointed.

I am so behind on recaps and I have so much to tell you guys!!

After I finished breakfast, I did the same back-to-back workout I did on Wednesday. I love doing yoga right after the shred. My abs feel amazing!

I had a hair appointment at 3 and a bunch of errands to do beforehand so lunch was on the go.

Pretty much a repeat of my breakfast. I didn’t actually get to eat it until after my hair appointment because I didn’t have time. I ate a huge apple instead. By the time I got around to eating this, I wasn’t even that hungry and only ate half.

Very simple. Nothing fancy.

Since Thursday night was my last night in Rockland, I met up with some friends at the Palisades Mall for dinner. I had time to kill after my haircut, so I went to Barnes & Noble to do some work on my laptop. (Notice the Starbucks cup in the picture above- Coconut Green Tea- Yum!)

I met Dara, Julianne, and Julianne’s boyfriend, Chris, at The Cheesecake Factory for dinner.

I ordered the  Appetizer Fresh Vegetable Salad with no cheese and dressing on the side.

Had to use the flash (ugh!)

Asparagus, Green Beans, Tomato, Cucumber, Roasted Beets, Apple, Edamame, Radicchio, Romaine and White Cheddar. All Chopped with Pomegranate Vinaigrette (on the side)

The “pomegranate vinaigrette” was really a pomegranate glaze and the salad came with some sort of tangy, citrusy vinaigrette. I was a little disappointed. The description on the menu got me really excited for pomegranate vinaigrette. Oh well, the salad was good. I only ate half because Cheesecake Factory portions are ridiculous. Let’s not get into that because I could rant for hours if we do.

Julianne, Chris, and I shared a piece of the Wild Blueberry White Chocolate Cheesecake for dessert.

It was the perfect way to spend my last night in Rockland.

On Friday morning, the back seat of my car looked like this:

Ahhhhhhhhhhhhhhh!!! How crazy is that!? I always pack way too much stuff.

I downed an egg and a piece of toast with a bit of butter for breakfast.

After I had the other half of my bagel with PB from Thursday for lunch, I said goodbye to my parents :-( and hit the road.

Taking the NYS Thruway from my parents’ house to my apartment in Albany usually takes about two and a half hours. For some ridiculous reason, I decided to take Route 9W North most of the way instead. It took me four hours to get home!!!!!!!!!

Iced Coffee and Cantaloupe were needed to lessen my frustration.

I finally got home at around 6:00pm. I left at 2pm.

Jeff and I decided to go to Unos to celebrate our return to Albany! Plus, we had no food in our kitchen.

After driving for hours, I came to the conclusion that Sangria was just as necessary as iced coffee and cantaloupe.

I ordered the Roasted Vegetables and Feta Wrap with Brown Rice instead of fries.

A Whole Wheat and Flaxseed Tortilla filled with Roasted Vegetables, Carmelized Onions, Tomato, Feta, Lettuce and Balsamic Vinaigrette.

The rice came with with Sweetened Dried Cranberries mixed in. Yum! I ate half of the wrap and the rice and took the rest home.

And it was fantastic!
