Counting Sheep and Eating Hummus

So, how many of you went to a sheep farm this weekend? Anybody? Nobody!? I can’t be the only crazy one.

Before I get to that, let me rewind a bit and tell you about the awesome time I had on Saturday night. I skipped taking pictures of eats today since all I had was leftovers.

I ended my last post with breakfast on Saturday morning. I ate pretty lightly for the rest of the day because Jeff and I had plans to go out with our friends, Jess and Seth, for a late dinner on Saturday night. To prevent this post from becoming a book, I am not going to post my eats for during the day on Saturday. They were boring anyway!

Jess and Seth got to our apartment at around 8 and we headed to the Moon & River Cafe for dinner. Unfortunately, the tiny place was packed and there was nowhere to sit so we left to go somewhere else. We’ll go back another day for lunch when it’s not so busy. πŸ™‚ We ended up at a local brewing company called Brown’s instead.

I knew what I wanted the second I opened the menu.

Vegetarian Black Bean & Barley Burger

Made with brewery barley, black beans, red and green peppers, onions, garlic, and a special blend of herbs and spices.

My mouth definitely exploded when I bit into it. I know I had a black bean burger on Friday night but that was frozen and this definitely was not. All of the different flavors blended excellently together. I need to recreate this at home!Β  I didn’t eat the fries because the waitress told me that they are cooked in the same oil that the chicken wings are cooked in. I’m not sure how strict of a vegetarian I want to be yet so I passed on them. What do you think?

Of course, I ordered a beer with dinner. C’mon! It’s a brewery!

When we got home, Jess and I cracked open a bottle of wine.

And things got a bit silly. I’m not really sure how we got ourselves up the next morning to go to the sheep farm.

I made a big batch of broccoli eggs for breakfast for everyone.

And then we were off!

Amazing! We’re planing to go back next month to see the lambing!

I seriously don’t think I can ever eat meat again after petting a cow. Looks like it’s going to be veggies only for life!

On the way home, we stopped at Uncommon Grounds in Saratoga Springs for lunch.

I ordered veggies and hummus on a toasted rosemary olive bagel. Veggies included: tomatoes, cucumbers, green peppers, and sprouts.

I love this bagel! They don’t have it at the Albany Uncommon Grounds for some reason. πŸ™ I ate half and took the rest home and brought it with me today for lunch.

When we got home, I did some yoga and then made a veggie (+ fruit) and pita chip plate for a snack.

Yes. More veggies and more hummus. I can’t get enough!

I made baked cheesy pasta with breadcrumbs and broccoli.

I’ll save the recipe for another post (unless specifically requested in a comment or email) since this post is gigantic already. I’m sure I’ll be making it again!

Breakfast this morning was the same as yesterday’s breakfast. Lunch was the same as yesterday’s lunch. And dinner was…wait for it…the same as yesterday’s dinner (shocker!). It was a day of repeats. I got up super early to read for class and didn’t get a chance to workout so I took today as a rest day! (I may still do some yoga to relax)

    Favourite Farm Animal – Alpaca!! I also love, love, love cows, and horses and baby chicks, and goats. I love them all!!!!

    That wine you had looks really good – was it carbonated?

    1. Jolene- Yes it was carbonated. I think it’s from a local winery. Jess gave it to me last year for my birthday. It’s been sitting in my fridge since then. I set a deadline of this year on my birthday to drink it (March). We were a little early.

  2. Um, I have never been to a sheep farm before – so funny! Too bad the first place was too crowded – my husband can’t stand to wait for a table.

    Favorite bagel: EVERYTHING – I love how the garlic crisps up in the toaster.

    Favorite animal? My dog Ed! πŸ˜€

  3. Ahh the sheep farm looks like so much fun!! How sweet! I vote you become vegan and then you and I open up a vegan icecream shop in Saratoga this summer. Sound like a plan? πŸ˜‰
    My favorite bagels are actually the ones from the Pricechopper bakery: either pumpernickel or chocolate chip.
    But wait! Panera used to make an apple pie bagel I think? That was amazing. I wish we had more local Mom&Pop bagel shops!
    They’re also one of my favorite things to bake, and it’s such a fun endevor. I always impress people with “Yahhh, I mad homemade bagels this weekend.” πŸ˜›

    Oh and my favorite animal (on a farm) are goats. They’re so funny! We always bond when I go to the corn maze. πŸ™‚

    1. Mae- that definitely sounds like a plan but I don’t need to be vegan to like and sell vegan ice cream! I don’t think I could EVER be vegan but then again I didn’t think I could EVER be a vegetarian.

      Have you tried Uncommon Grounds in Saratoga or Albany? They’re a local coffee and bagel shop that I LOVE supporting over Starbucks and Bruegger’s and even over Panera because that’s a chain too.

      And you might have to make me some bagels! You should sell them with you PB at the farmers’ market!!

  4. Dear Roseyrebecca, I loved reading your post! I think its awesome you go to SUNY Albany. I went to SUNY Delhi and it was cold, cold, cold but I had a blast! Your blog is the coolest idea ever, and I think I am going to have to do the same thing now..but it wont look as nice as yours. My favorite thing about your site was the brocoli omelette you made.
