Pizza, Pancakes, and French Fries!

Yesterday morning, I was two-thirds of the way through level 2 of Jillian Michael’s 30 Day Shred when Jeff called me from outside to tell me that I had a flat tire. I think running around my apartment like a crazy person trying to get ready so I could get to a gas station to put air in my tire before class made up for the part of the shred I didn’t do.

At least I had a yummy breakfast.

I had 2 slices of Arnold German Dark Wheat bread: One topped with sunflower butter, plum rhubarb jam, and shredded unsweetened coconut and the other topped with Saratoga PB Company Maple PB, Toasted Wheat Germ, and Sliced Banana. It was such a filling breakfast!

I left ridiculously early and drove 20 mph with my hazards on to the gas station to get air in my tire. I ended up having loads of time before I needed to be in class, so I stopped at Uncommon Grounds for some iced coffee. :-) During class, I had a Lemon Poppyseed Heart Thrive cookie for a snack.

I met Jeff for lunch at the Campus Center after class and got Curried Rice and Lentil Soup from Au Bon Pain.

The soup held me over for most of my 2:45-5:35 class. My stomach started rumbling during the last half hour.

When I got home, I toasted an Ezekiel Whole Wheat Pita and chopped up some celery to dip into Black Bean Hummus for a snack.

Then I got to work on the weirdest shaped pizza I think I’ve ever made.

What is that? I blame Jeff. He usually helps me roll out the dough but he was taking a nap while I was preparing dinner. The result? An alien shaped pizza.

On my half, I had sliced eggplant and red pepper. Jeff had Tofurky Sundried Tomato & Basil “Sausage” Slices on his half.

I may or may not have devoured a third slice without taking a picture. :-)

I woke up starving this morning.

I headed straight for the kitchen and toasted a slice of Arnold German Dark Wheat bread and topped it with sunflower butter, shredded unsweetened coconut, and toasted wheat germ. YUM!

Jeff and I had big plans for breakfast this morning.

Oh man! Oh man! Oh man! Oh man!

I scraped a good portion of that butter off the top and added a little bit of blueberry maple syrup. It took more time for us to get to Ihop than it did for us to sit down and eat our pancakes. We barely sat down before plates of pancakes appeared on our table. They were amazing, of course. Splurging on Ihop pancakes once in a while is a necessity.

After breakfast, I went to the gym and ran 2 miles on the treadmill at a 5.5 pace. I also walked for half a mile at a 10% incline at a 3.7 pace.

I had some errands to do when I got home and it was snowing pretty hard by the time I was done with them. I am terrified of driving in the snow. I’m a wimp. I really am. It took me 40 minutes to get home when it usually takes 10. I e-mailed my professors as soon as I got home to tell them I wouldn’t be at my night classes. SNOW DAY! I also just received an e-mail informing me that my classes tomorrow are canceled. DOUBLE SNOW DAY! Don’t be jealous.

Lunch was leftover pizza.

With a pile of Steamed Broccoli and red peppers and Terra Spiced Sweet Potato Chips (amazing!)

I had a handful of dark chocolate chips for dessert:

For an afternoon snack, I unwrapped one of the snacks I had packed for tonight’s class.

This x 2 (minus the chocolate chips on the second one)

This was a Wasa Cracker topped with Maple PB, Toasted Wheat Germ and Dark Chocolate Chips.

Another snack consisted of mini bruschettas .

For dinner, I made french fries!

I chopped up a couple potatoes, coated the slices in olive oil and spices, and popped them in the oven on a baking sheet at 450°F for 20 minutes, turning once.

We had Annie’s “Bunny Pasta with Yummy Cheese” and peas with the fries because I am 5, apparently. It was a very starchy dinner.

For dessert, I had a banana mess

In the mix:

  • 1 Sliced Banana
  • A sprinkle  of Old Fashioned Oats
  • A few Dark Chocolate Chips (not too many- they melt so you only need a few)
  • 1/2 spoon of Sunflower Butter
  • 1/4 spoon of Maple PB
  • A sprinkle of Toasted Wheat Germ (I’m obsessed)

Heated in the microwave for 20 seconds. SO GOOD!
