For some crazy reason, I decided to walk to the gym yesterday morning in the rain and snow. I don’t really remember what made make that decision. I think I looked outside and just decided that it was the right thing to do.
So after I finished consuming a jar full of oats…

Inside: 1/2 cup oats, 1 cup vanilla soy milk, banana, tsp cinnamon, tsp shredded unsweetened coconut, tsp toasted wheat germ, tsp flax seed
…I bundled up and headed out. I marched through mountains of snow to the beat of the songs blasting from my headphones. I got about halfway to the gym when I realized that I forgot my sneakers. Can’t run in snow boots, now can we? I turned around and took a different route through my apartment complex and came across this:
Doesn’t that make you ridiculously happy? Mr. Snowman even has a pipe! A PIPE! My snowmen never looked that cool.
I ran 2 miles at the gym before my stomach started acting up again. I walked home and did 30 minutes of yoga on my living room floor.
Then, I had a marvelous lunch:
Potatoes taste so much better when they are baked in the oven instead of the microwave, don’t you think? I topped my humongous sweet potato with a bit of butter, cinnamon, and honey. I had fresh steamed broccoli on the side, which also tastes better to me when it’s fresh, instead of frozen.
Which reminds me, Jeff got me an amazing magnet for Christmas which I never posted a picture of. SO here ya go:
Don’t mind the picture to the left of the magnet. I tried to draw a horse but it didn’t work, so I turned it into a guy riding a cow….
ANYWAY…
I HAVE to talk about the awesome iced tea I had with lunch yesterday.
Seriously? Pomegranate Green Tea?!?!? *Explodes* This iced tea is so good, that I just stopped typing mid-sentence to grab a bottle from my fridge. Please go find this iced tea and buy a million bottles of it before I buy them all. I usually hate sweet teas but this one is just sweet enough. The flavor is excellent.
For an afternoon snack, I had a bowl of Cascadian Farm Organic Raisin Bran drowned in vanilla soy milk.
And for dinner, I made Veggie Chili!
It took me 3 hours to make because I used fresh beans from the bulk section of the co-op instead of canned ones. I found a random recipe online and it wasn’t my favorite so I’m not going to post it. When I find the perfect veggie chili recipe, I’ll definitely let you know!
Jeff used his grandmother’s recipe to make cornbread from scratch.
It was delicious!
Not too bad for my first shot at vegetarian chili!
For dessert:
I cannot wait for summer when I’ll be able to devour 50 pounds of blueberries a week. I’m not even kidding. Blueberries are my favorite food EVER! I refuse to buy them out of season because they’re not as good. Plus, it makes having them during the summer ten times better!
This morning, I had a yogurt mess for breakfast. Well, it was more like yogurt soup.
In the bowl:
- ~1/2 cup Plain Yogurt
- 1/2 spoon Jay Robb Vanilla Brown Rice Protein Powder
- Toasted Wheat Germ
- Shredded Unsweetened Coconut
- Walnuts
- Frozen Strawberries
- Almond Butter
- Couple droplets of NuNaturals Vanilla Stevia
- Cinnamon
I would have added bananas but we’re out of them. Call the police. We need to go grocery shopping so bad! We’re almost out of oats! It’s horrible. How will I live?
After breakfast, I did level 2 of the 30 Day Shred. Jillian Michaels kicks my butt sometimes!
I had classes today for the first time since Monday. My class was canceled last night because of the weather (triple snow days for me!) I had an apple heart thrive cookie during class. It tasted like an apple pie (yum!).
After class, I stopped by Uncommon Grounds to get a cinnamon raisin bagel with PB for lunch. I also got a blueberry coffee with a bit of vanilla syrup and soy milk mixed in. (Mae- I stole your idea from last weekend!)
I took my lunch to Adirondack Tire to figure out why my tire keeps going flat. Turns out I had a nail in my tire! Sheesh! While I waited for my tire to get plugged, I ate my bagel, drank my coffee, and read every single word of the first ten pages of the April 2009 Cooking Light. It was amazing!
Troy Night Out with Jess and Seth tonight! Plus, I think we’re checking out a Mexican Irish restaurant (????!??) Yeah, I don’t know either!

I was just thinking today how I can’t wait for summer fruit! I was thinking of strawberries, but blueberries will be awesome too
I love Sweet Leaf Tea. It is actually based out of Austin, TX so it is available everywhere here in Houston. It is a little pricey for me, but totally worth it for a drink on the go!
