100 Lunges

I randomly decided to do 100 lunges across my apartment yesterday. My butt is paying for it today. Sorry if that’s too much information. :-)

It’s 6 a.m. and the sun is coming up already. That’s how you know spring is coming. It also stayed light outside until 5:45 last night!! YAY! I can’t wait for warm weather!!

Monday night’s dinner looked like this:

A veggie wagon wheel and spiral casserole. Yum! This is the easiest dinner to make!

  1. Preheat oven to 350°F
  2. Cook pasta according to package directions
  3. Heat sauce– add garlic and onions like I did if you want.
  4. Add whole wheat bread crumbs (from one slice of bread-with edges sliced off–save some crumbs to go on top) to sauce and spoon (0r 2) of parmesan cheese.
  5. Mix pasta and sauce together and transfer to casserole dish (make sure to lay some sauce out on the bottom of the dish)
  6. Top with more breadcrumbs and parmesan and shredded mozzarella cheese. Cover pan with foil.
  7. Bake for 20 minutes. Remove foil and bake 5 more minutes
  8. Eat (watching  ‘How I Met Your Mother’ or some equally entertaining show)

With salad and poser garlic bread on the side (used an Arnold Thin).

Blueberry Dark Chocolate for dessert:

I’ve had Maple-Coconut Pecan Banana Oats for breakfast every day since Sunday.

I’m addicted. I plan to have them again this morning.

Before my apartment lunge party yesterday, I spent 3 miles on the crossramp at the gym. I decided to take a break from running on the treadmill. I’ve missed the crossramp.

I ate an early lunch yesterday at 11 a.m. because I had breakfast at 6:00 yesterday morning.

I had leftover pasta with a salad. Yes, those are sweet potato fries on top of my salad. They were delicious.

I spent a good portion of the day reading Shape magazine for my magazine writing class. I had to do a profile of a magazine and I just got Shape in the mail. I’ve always felt guilty about reading magazines during the semester when there is other work to be done. Since it was my homework, I didn’t feel guilty at all this time! :-)

On Tuesdays, I have classes from 4- 8:35 and since I ate lunch very early and I knew I’d be eating dinner very late, I snacked my way through the day.

I also had a PB&J+Banana on an Arnold Thin before class and a Cranberry Heart Thrive Cookie during class. I didn’t take pictures for some reason.

Jeff and I tried something new for dinner:

I didn’t get home until nearly 9 p.m., so it was nice to  just pop this in the microwave for two minutes and have dinner.

The dish was very spicy and flavorful but lacking in the potato department. We decided that we need to make rice with it if we get it again. On the side, I had lettuce and half a tomato. Haha- I was too tired to make a full salad.

Dessert was a handful of dark chocolate chips.

I just looked outside and it’s SNOWING. Spring needs to hurry up!

I’m off to read the paper, eat oatmeal, and yell at Jillian Michaels through the TV. (Has anybody tried her ‘No More Trouble Zones’ DVD. I bought it at B&N a couple months ago and am thinking of exchanging it for something else. I’m a little bored of her workouts)
