For my birthday last month, my wonderful boyfriend gave me a waffle maker. I’ve wanted one since last summer so you can imagine my excitement when after pouring in the batter, and lifting the lid 6 minutes later, I discovered perfect waffle-like waffles.
Check that out! Seriously!? I made that! I literally jumped up and down. It doesn’t take much to excite me.
Aside from making a batch of awesome waffles last weekend, the past week has been a blur of school work and food.
Starting on Sunday night with Quorn Chik’n Nuggets and Annie’s Mac & Cheese
I was surprised at how similar the Quorn Chik’n Nuggets are to regular chicken nuggets. The Annie’s Mac & Cheese was tasty, as always. I had a big salad on the side.
Later in the week, Jeff and I made a scary-looking, yet delicious margherita pizza
Check out how ugly that is! I don’t know what happened there. We just failed at rolling out the dough.
Breakfast all week has consisted mostly of banana oats but I did have this fantastic egg sandwich one morning:
With strawberries on the side.
Other than that, PB sandwiches and huge salads have made up my lunches.
About a month ago, the kind people at Seapoint Farms sent me some Kooloos Soy Nuts to try out.
They sent me bags of the Orignal, Salsa, and Honey BBQ kinds. I’ve been using them to top my salads and am very impressed. They provide the satisfying crunch you’d get from a crouton and are packed with loads of flavor. They’re made from soy and flaxseed, so they are healthier than croutons! I’ve tried the salsa and original kinds so far and like them both. I can’t wait to try the Honey BBQ! I definitely recommend picking up a bag if you see them at the store.

OK, so I’m totally jealous of your waffle maker. I had one. It kicked ass. It was my mother’s waffle iron from the 1970s. It worked wonderfully until an ex-boyfriend dropped it in his kitchen one day –– after I told him it was too hot to pick up. I tried to fix it and it worked for a little while. My parents were out visiting this Christmas and I busted it out thinking I might fix them something fancy for breakfast. No such luck. The batter stuck to the iron and the lid wouldn’t close properly. I know the batter problem has nothing to do with my ex dropping the thing, but I blame him for that too.
Regardless, I tossed it in the dumpster that day in addition to the three burnt, crumbled waffles that never were. ):
