My Taste Buds May Explode

Today was a good day:

  • I had an awesome first day at my internship
  • I found out that I got A’s in all of my classes this semester
  • I made Flax Seed and Tomato Zucchini Parmesan

Before I get into all that, let me tell you about yesterday because yesterday was pretty awesome, too. And I have pictures to prove it!

Yesterday morning, I decided to take two classes back-to-back at the gym: upper body and abs and spinning.

Pre-workout fuel:

There’s nothing better than PB toast before a workout. It’s my favorite kind of fuel.

The upper body and abs class was pretty good. I have to use heavier weights next time. I started out small but I think I can handle more.  One thing that annoyed me was this woman who came in late and stood right in front of me. I don’t really understand why she couldn’t find another spot. And when we did our cardio around the room, she was going super slow and I was stuck right behind her! Ugh! Spinning was awesome as usual.

Kashi Oat Flakes and Wild Blueberry Clusters Cereal + Iced Coffee with Vanilla Almond Milk

For lunch, I tried to be creative and came up with this:

Don’t worry- that’s not real turkey! It’s Tofurky “turkey” from the freezer aisle at the co-op. I heated it in a pan with mozzarella, tomato, apple, and pear slices and plopped it all on top of a slice of whole wheat toast. Sounds like a weird combination, but it was so good! I had half a sweet potato on the side.

After lunch, I went shopping. I needed clothes for my internship, so I headed to Target. Look at everything I got for only $120:

Most of it is interchangeable. I am only working twice a week so I see many different outfit combinations in my future.

After Target, I went to the co-op and spent way too much time there. I love that place! I spent so much time there, that I missed my Body Flow class. Fail.

When I got home from the co-op, my hunger inspired this:

Step One: Saute Zucchini, Tomato, Lettuce, and Black Beans in a Pan with 1 tsp of Olive Oil

Step Two: Tranfer to a Warm Tortilla and Top with some Cheddar

Roll and Eat with Salsa

For dessert- A Sandwich Thin with PB, Shredded Unsweetened Coconut, and Dark Chocolate Chips

This morning started out like this:

Banana Oats topped with PB, Dried Cranberries, Dark Chocolate Chips, Cinnamon, and Unsweetened Shredded Coconut.

Then, I spent 5 years fiddling with my outfit before I left for my internship:

What do you think? I like it! I’m shopping at Target more often!

Lunch was nothing special: just a PB & Creamed Raspberry Honey Sandwich. I walked around Saratoga Springs while I ate it. Have I mentioned that my internship is in SARATOGA SPRINGS?! I love it there. The first day in the office went pretty well. I’m excited to go back on Thursday!

I thought about Zucchini Parmesan the whole way home!

Flax Seed & Tomato Zucchini Parmesan

Disclaimer: I didn’t use a recipe for this. If you don’t trust that it was amazing, I’m sure you can find a zucchini parmesan recipe elsewhere

What I used:

  • 1 zucchini, sliced lengthwise into strips
  • 1 egg, beaten (or egg substitute)
  • 1+1/2 tbs of flax seed meal mixed with a sprinkle of  black pepper, garlic powder, and dried basil
  • 1 small tomato, chopped
  • 1/2 jar of pasta sauce
  • 3 slices of mozzarella, halved
  • fresh parmesan cheese (use your own judgment for amount)
  • tsp of olive oil

  1. Preheat oven to 350°F
  2. Heat pan with olive oil on top of stove.
  3. Dip Zucchini slices in egg, then coat with flax seed mixture, add to pan and heat for about 4 minutes, flipping over in between.
  4. Fill the bottom of baking dish with half of pasta sauce, when zucchini is done, arrange it in dish.
  5. Add chopped tomatoes, sliced mozzarella, and parmesan. Pour rest of sauce on top.
  6. Cover dish with foil and heat in oven for 20 minutes
  7. After 20 minutes, take foil off, add more parmesan cheese and bake for another 5 minutes.
  8. Eat.

Yum! I had about 1/3 with half a serving of whole wheat spaghetti and half an arnold sandwich thin with olive oil and garlic powder sprinkled on top. It was just what I was craving!

    I’m def gonna try making the zucchini. One of my more creative meals is a vegan chili recipe i tweaked from the internet. It even wins over meat lovers, it’s got soy and bean protein and lots of fresh veggies.

    I had two internships when I was at school. One for Boston’s Weekly Dig (weekldig.com) and one for The Daily Hampshire Gazette (gazettenet.com). Two different and really great experiences. Good luck! :) Seems like we keep becoming more alike. Vegetarian journalists ftw haha!

    Right now I’m working part time editing and producing for Advance Internet’s web of news sites. I got the gig through becoming a TA and getting close with one of my professors and he recommended me. Networking and internships is the most important thing you can do as a student journalist. You learn the most when you’re actually doing the job. Also, work on your school paper if you don’t! I wrote and later was an editor for them too.

  • I like the whole wheat spaghetti, it looks nice and taste nice for sure, i love spaghetti a lot, but have always fail to prepare a nice one:)

  • You’re exercise enthusiasm is spreading across the Internet. I think I may go for a run this morning, thanks to your upper body and abs spinning class. If I pass out in the heat, it’s your fault. :)

    Now – about that internship. I want to hear more! I want to know how it’s going. Your likes and dislikes. What you didn’t expect, etc.

    I interned at a small community paper when I was a senior in high school and then again at an alt weekly in Buffalo during my sophomore year of college. You’d think I would have enjoyed the alt weekly better. (It was a hip, liberal, arts and entertainment-heavy publication aimed at 20somethings.) But it was the small community paper that I dug more. The staff at the alt weekly were too cool and removed for my tastes. The little community paper had more heart. I guess this explains why my husband is the one who works for an alt weekly, and not me.

  • The most creative meal I’ve ever come up with is probably my Chocolate Chip – Spinach Pancakes. My two year old son will hardly eat anything, but one thing he will eat is pancakes, so I try to sneak lots of healthy things in them. Chocolate chips and spinach have become a regular addition to our pancakes, sounds strange but you can’t even taste the spinach. They are truly delish!
