If My Feet Fall Off…

My feet may fall off. I need more comfortable open-toe dress shoes. IF my feet do fall off, it will be OK because I’ll still have flax seed french toast and that’s a lot better than having feet anyway.

This was my breakfast yesterday and it tasted better than it looks, I promise.

What I used:

  • 2 slices of whole wheat bread
  • 1 egg
  • 1 tbs of flax seed meal
  • 1 tsp of vanilla
  • 1 tsp of cinnamon
  • 1/4 cup vanilla almond milk
  • 1 banana, sliced lengthwise
  • shredded unsweetened coconut, to sprinkle on top

What I did with it:

  1. Mix egg, flax, vanilla, cinnamon, and almond milk together in wide bowl
  2. Spray pan with cooking spray and heat
  3. Soak bread in mixture until it’s completely coated on both sides. Add to pan, heat 2-3 minutes on each side.
  4. After you flip the bread over, add bananas to pan- heat on both sides.
  5. Plate french toast, put bananas and a sprinkle of coconut on top

Mmm. It was a perfect Wednesday breakfast. I may have to make it again tomorrow morning. After breakfast, I headed to an 8:30 spin class. No matter how many times I go spinning, it always kicks my butt. That’s not a bad thing. I like how accomplished I feel when I complete a class.

When I got home from the gym I made a green smoothie:

Amazing Grass sent me samples to try a couple months ago and I love them all. I just haven’t had time to do a proper review yet. It’s coming. I promise. Anyway, my smoothie contained the above ingredients plus 1/3 of a frozen banana, shredded coconut, toasted wheat germ, and  unsweetened cocoa.

My awesome neon pink straw made the drink!  And by the way, goat’s milk yogurt is amazing. Try it if you haven’t already. I’m apparently on a goat’s milk/cheese/yogurt kick.

Lunch was leftover Flax Seed and Tomato Zucchini Parm on two slices of whole wheat toast. (I guess I’m on a flax seed kick as well- not complaining)

Dinner was more leftover zucchini parm with a honey-lavender goat cheese and walnut salad.

That goat cheese just might be the best thing I’ve ever tasted…ok I’m exaggerating but it is definitely one of the best things I’ve ever tasted. Yes. It tastes like lavender. Yes. It’s a little strange. But I love  it. It’s floral, sweet, and creamy. Perfect for salads, fruit, and crackers. The best thing about this cheese is that it’s made on a farm right in New York! It’s called Nettle Meadow. I really want to go check out their store-it’s not too far from me. They also sell at a bunch of retailers and restaurants. For dessert, I broke off a piece of the dark chocolate I bought at the co-op the other day.

How pretty is that? It’s 71% cocoa from The Grenada Chocolate Company. I tried a sample of the 60% at the co-op and the guy there told me that the 71% isn’t as good. I disagree. I think it’s better. I’m a dark, dark chocolate type of gal.

This morning, as I was rushing around my apartment getting ready to leave for my internship, I managed to inhale a bowl of banana oats.

I ate lunch today at a place in Saratoga that claims to be “the best food and wine store between Manhattan and Montreal.” It’s called the  The Putnam Market.

They apparently thought my name was Gloria. Just kidding- that’s the name of the sandwich I ordered. Gloria came packed with fresh goat cheese (see what I mean about this goat cheese thing?), roasted red peppers, pesto mayo, lettuce, and tomatoes. I got it on a multigrain bread that was so good, I probably could have just had the bread for lunch.

The sandwich did not disappoint. I’m in no position to call it the best sandwich between Manhattan and Montreal but it was pretty darn good by my standards. There was literally a mountain of goat cheese on it–possibly too much. I had to scrap some off to find the peppers. I think that they get their goat cheese from the place I just raved about above. I’ll have to double-check. The sandwich was pretty pricey-$9- but I just read on the website that you can order half sandwiches for $6. Nice.

I’m really interested in trying the Tallulah, which consists of raw milk gruyere, avocado spread, and sprouts & herb mayo. From what I read, their hummus is supposed to be excellent, too. I definitely see more Putnam Market sandwiches in my future.  If you’re from Manhattan or Montreal, and you’re passing through Saratoga, stop by and let me know what you think.

ANYWAY, I have a blister on my toe from my crazy uncomfortable shoes. Maybe I’ll make some flax seed french toast to make it feel better.
