Breakfast Burritos and Little Kid Dinners

Does anyone else watch the Food Network while working out? Or is it just me?  What about those Food Paradise shows on the Travel Channel? C ‘mon, I can’t be the only one! Admit it! You watch them, too!

Moving on- I felt so energized at my upper body and abs class this morning. I love that class because the instructor mixes cardio with strength training. I kind of feel like I’m doing Jillian Michael’s 30 Day Shred, but with a group of people, not my TV. Unfortunately, I hurt my left shoulder during class. I felt it when I hopped on the treadmill after class to run a couple miles. It hurt to touch. I iced it and took ibuprofen when I got home.

And of course, this omelet, totally made it better:

You’re looking at a two egg and cheddar omelet smeared with salsa and homemade guacamole. It was so good. Cherries on the side made it that much better.

I took it easy at the gym yesterday morning. I walked on the treadmill for a half hour at a 10% incline. Then, I used various machines in the gym to work out my lower body.

When I got home, I was craving a breakfast burrito. I’ve been completely obsessed with Mexican food for the past month.

I don’t want to brag, but doesn’t that look amazing? It tasted amazing,too. I stuffed a tortilla with 1 scrambled egg, mashed black beans, cheddar, salsa, and homemade guac and then heated both sides for about 2 minutes in a frying pan. I topped it with with more salsa and guacamole. Definitely a perfect Sunday breakfast.

For lunch, I dug into a huge bowl of leftover salad from Saturday night

It was made up of romaine, fresh mozzarella, roasted red peppers, cucumbers, tomatoes, and parmesan cheese. No dressing because it was already so flavorful without it. I also had a small bowl of whole wheat shells and tomato sauce topped with parmesan.

Afternoon snacks looks like this:

Blueberries and cherries

Whole wheat toast topped with PB and Raspberry Creamed Honey…YUM

Dinner was yellow and green.

Annie’s Mac & Cheese, Corn on the Cob, and Shelled Edamame. I feel like this is such a little kid dinner. :-)

I was craving something sweet for dessert, so I made an ice cream sundae

This was Edy’s Slow Churned Fudge Tracks ice cream topped with blueberries and cherries. Perfect.

I’m off to boil some wheat berries for this awesome chili that I am making tonight. At least, I hope it’s awesome. I’ve never tried it before! I’ll be back with a review!
