I’ve been waiting all year for the return of blueberry season in New York.
If you’re new to my blog or if you started reading after August of last year, you don’t know about my blueberry obsession. Blueberries are quite possibly my favorite food ever. I refuse to buy them throughout the year though, because I know they are only fresh and local during the summer months. Plus saving them for a summer treat makes me love them so much more!
Enter the return of blueberry oats:
Oh My Yum. You’re looking at a a bowl of very ripe banana oats mixed with vanilla almond milk, cinnamon, and unsweetened coconut and topped with PB and BLUEBERRIES!!!! *Dies* Best. Combination. Ever.
I had to be in Saratoga for my internship today, so I packed lunch.
I brought a romaine lettuce salad topped with tomatoes, carrots, walnuts, and sunflower seeds. I packed cooked wheat berries and frozen edamame on the side.
My salad ended up like this:
So filling! I ate the the edamame for a snack later in the day.
All I kept thinking about on the way home was leftover chili and cornbread.
It was even more delicious today than it was last night! The cornbread stayed nice and moist. I really like the avocado topping. I never used to like avocado. I’m a huge fan now. I love when foods I used to hate grow on me–is that weird?
Dessert was a chocolate ice cream mountain!
I guess that’s not really a mountain but you get the idea. 🙂
I’m off to relax, drink tea, and watch a movie with Jeff! (p.s. I just inhaled a slice of whole wheat toast smeared with PB-shhh)
