I’m sore as heck from my workout yesterday. I love that feeling. My triceps feel like they are going to explode!
Yesterday was so relaxing. I spent the whole day in the kitchen cooking and baking.
I took a break for lunch around 2:30. The omelet I had for breakfast kept me full for a really long time. Must of been the guac.
Lunch was a Big ol’ Salad
I topped romaine with tomatoes, roasted red peppers, parmesan cheese, hummus, and a bit of lemon tarragon dressing. Yum!
I also had a slice of whole wheat toast topped with PB, Cherries, Blueberries, and Dark Chocolate Chips.
After lunch, I decided to make pizza dough to put in the freezer for days when Jeff and I want pizza but I don’t have time to make the dough. The recipe I use makes enough dough for two medium sized pizzas. Yesterday, I decided to double it so we’d have enough for four.
This is what happened:
IT’S ALIVE!!! The dough rose…a lot. Not a bad thing. Next time I double the recipe I’ll use a bigger bowl.
Anyway, after the dough grew into a huge dough boy and ate me, I got to work making chili, as promised.
I used a recipe on Eating Well’s website for Zesty Wheat Berry-Black Bean Chili. I followed the recipe exactly. The only thing I did differently was add frozen corn to the mix.
I made cornbread to go with it-another Eating Well recipe.
Our friends, Jess and Seth, came over to do a taste test.
We garnished our bowls with shredded cheddar and sliced avocado. I would make this chili again in a heartbeat. It was hearty and delicious. The wheat berries and black beans gave it an awesome texture. It wasn’t too liquidy or tomatoey like some vegetarian chilies I’ve had. It was perfect. Definitely try this recipe. You will not be disappointed. The cornbread was awesome too- moist and crumbly.
After dinner, we walked down the road to the middle school athletic fields and played soccer for about an hour. I did more running around than actually kicking the ball but hey, it was great exercise anyway.
Dessert was a mug ‘o chocolate ice cream with whipped cream on top.
