Deadlines and Dead Cars

I work best under deadline. I don’t just mean for writing assignments. I’m talking everything.

Including cleaning

Ignore my fingers My nails are in desperate need of some color.

I made these post-its at 6 a.m. while I was inexplicably awake and energized. I hung one on my closet door and the other on the mirror above my dresser. If my closet and drawers aren’t clean by the 30th, someone needs to call the police. I’m not kidding.

This morning, I kept my banana oats simple with just a spoon of PB on top.

The banana I added was ridiculously ripe so the oats were  sweet and delicious. I almost didn’t even add PB, but I was afraid I’d go through peanut butter withdrawal within a couple hours.

I had to be in Saratoga Springs for my internship today, so I packed my lunch and snacks:

I packed two leftover slices of pizza and a small salad composed of romaine, walnuts, red onion, and tomato. I brought a little balsamic vinegar to top my salad with.

I was pretty stumped about what to bring for a snack since our kitchen is lacking food right now. I was staring at the Blueberry Almond Feed Granola in my pantry for a while before it hit me…

I could make my own trail mix!

In the mix:

  • 1/4 cup Feed Blueberry Almond Granola
  • Newman’s Own Organics Raisins
  • Shelled Sunflower Seeds
  • Dark Chocolate Chips
  • Unsweetened Shredded Coconut (not pictured)

Best. Idea. Ever.

I also stuffed a snack bag full of baby carrots. Then, I hit the road.

Unfortunately, I had to eat cold pizza and never got a chance to try my trail mix. Why, you ask? BECAUSE:

My car died.

I was driving into Saratoga when my cd player started going crazy. Alanis Morissette started to sound like an alien and I knew something was up. My car dragged a bit pulling into the parking lot, and then wouldn’t start again once I turned it off. Jeff just replaced the battery a couple weeks ago, so I knew it couldn’t be that.

I called Jeff and he drove up to jump my car. It wouldn’t hold a charge, though, and died again like two seconds later. Finally, we got it running and I brought it to Midas. I had to get the alternator AND the battery replaced. UGHHH- not so great timing financially.

I’m trying to be optimistic about it. Now my car is fixed. HUZZAH!

Jeff and I ate cold pizza in a parking lot and I left my internship early to get my car troubles sorted out. That should be the name of a song.

Jeff and I were starving after running around trying to get things in order.

Enter Sweet Potato Fries from a diner in Saratoga:

I could have eaten all of them. I didn’t. I dipped them into the balsamic vinaigrette that accompanied Jeff’s side salad. Twas an awesome combination.

After a ridiculous long day, Jeff and I headed home and decided that burritos were the answer.

We used rice and beans as a filler:

TADA!!

I heated the rice and beans with sauteed red onion, garlic powder, and Frank’s Red Hot. Then I stuffed my tortilla with the mixture, salsa, and a bit of shredded cheddar.

I haven't had a snickers bar in forever!

And my new favorite dessert:

Cheerios, Vanilla Almond Milk, Dark Chocolate Chips, and Unsweeted Shredded Coconut.

Not going to lie- I had two bowls!

That’s all for today! I’m heading down to my parents’ house in Rockland this weekend for Father’s Day. We have a lot of fun things planned! Can’t wait to tell you about it!
