Hey Blogfaces! Today felt like a tornado.
It started early with breakfast at my laptop.
I kept it simple with whole wheat toast with PB and blueberries. I had a fancy glass of iced coffee with breakfast.
I did not drink any of that wine in the background, by the way. I just wasn’t feeling the alcohol at 6 a.m. thing.
I had to be in Saratoga early this morning for my internship. Since I knew it was going to be a lonnnng day, I packed a power lunch!
This was more like a throw everything I have left in the kitchen into a bag and run out the door lunch…but shhhh… we can pretend.
Our kitchen is filled with random food because we haven’t gone grocery shopping in a week or so. My lunch salad was ridiculously random but delicious.
- Frozen corn
- Frozen edamame
- Frozen green beans
- Frozen Wheat berries
- Chopped Summer Squash
- Chopped Zucchini
- 1/4 of a Tomato
The salad defrosted by lunchtime and looked like this…
Yum! So good for such a weird lunch.
Before lunch, I snacked on blueberry almond Feed Granola. I didn’t eat my salad until nearly 3 p.m.!
I left my internship a little earlier than usual because my head felt like it was going to explode. I was ju st feeling gross in general, so I was happy to be able to slip out. I ate my watermelon on the drive home. Eating watermelon while driving is no easy task, people. Neither is taking pictures of yourself eating watermelon while driving…just sayin’.
My headache was gone by the time I got home. I had a arnold sandwich thin smeared with PB for a snack and to fuel for my after-work workout. My friend, Jess, came over and we went to a body pump class. The class kicked my butt again, but I loved it!
When I got home, Jeff and I failed at rolling out pizza dough.
So, we turned the dough into garlic knots…naturally.
This was so simple! I mixed garlic, basil, and olive oil in a bowl, and then rolled each dough ball through the mixture. I popped them in the oven at 425° for 6 minutes and wahla
Jeff made toast pizzas under the broiler.
They were awesome! We dipped out garlic knots into heated pizza sauce. I had watermelon and corn on the side.
For dessert, I inhaled this small piece of shower cake.
This pic made me laugh a bit. Not sure why!
Well, I’m off to bed! Jess and I have plans to sun bathe and swim at the pool in my complex tomorrow. Maybe the water will help heal our sore legs and arms.
