Who else is happy that it’s Friday?
I am! I have a jam-packed weekend, complete with hanging out with friends, pool-lounging, and reviewing restaurants for the paper. Oops- that was part of my exciting news that I said I wasn’t going to share yet. I guess I blew it, though, so I might as well tell you now!
My internship at The Saratogian is technically over on Tuesday, but I’ve been hired as a freelance writer for the paper’s bi-weekly art, style, and entertainment magazine, The Scene. There are five summer issues of The Scene left and I will be writing a column for each one featuring vegetarian-friendly restaurants in Saratoga Springs. My first review is on Sunday. I will be writing other stories for The Scene, but I don’t want to tell you everything at once! That’s no fun! I guess you’ll just have to wait until I post the links! Just as a side note: I will still be posting about my daily eats, even when I do restaurant reviews, so you’ll have a sneak-peak at what my column will be about.
I am SO excited! Anybody want to help me come up with a name for my column?
Moving on to yesterday’s eats!
I mourned my empty peanut butter jar yesterday morning…
It was a beautiful funeral…

Lunch was packed:
- Olivia’s Organics Spinach/Spring Mix Salad: Grape tomatoes, Green Pepper, Goat Cheese, Sunflower Seeds, Annie’s Lite Raspberry Vinaigrette.
- Odwalla Chocolate Chip Trail Mix Bar
- Chobani Raspberry Yogurt with Feed Blueberry-Almond Granola
I actually ate the Odwalla bar this time. It wasn’t my favorite- the chewy consistency threw me off. For some reason, I thought it would be crunchier. Oh well, live and learn.
Jeff and I made tacos for dinner.
I sauteed onions with a little Frank’s Red Hot and Garlic Powder…
And added them to the pinto refried beans…
Served with homemade guac, of course…
All together now…
I had corn-on-the-cob and cherries on the side.
Dessert was simple.
I’m off to a body pump class. I intend to master the push up today, and not fall on my face like I usually do. Wish me luck!
