Happy 4th of July!!!
Hope you’re all stuffing your faces with BBQ and spending time outside today. We have beautiful weather in upstate N.Y.
I, for one, have a very exciting day planned. I’m heading to Saratoga Springs to check out a veg-friendly restaurant for the paper. Miss my exciting news? Read about it here.
I have a lot to do this morning before I leave, so let’s get this show on the road.
Yesterday morning started with an early trip to the gym. I ran for one mile on the treadmill and then walked on an incline for 30 minutes. It was a low-key workout because I was still sore from body pump on Friday.
When I got home, Jeff made me Banana Oats.
I topped the beautiful bowl with blueberries, cinnamon, and PB. My original plan was to go down to Wolff’s Biergarten with Jeff and his friends to watch the World Cup match, but something came up and I needed to help my friend, Jess, with some errands.
I didn’t mind. I got a bagel from Uncommon Grounds out of it. Oats just didn’t keep me full yesterday morning for some reason.
I hadn’t been to Uncommon Grounds in about a month and I was going through some serious withdrawal. Jess and I split a cinnamon raisin bagel with PB. (Check out Jess waiting patiently in the background as I took a billion pics). The bagel was crunchy, hot, and delicious, as always.
After we were done with our errands, we headed to the pool in my complex to relax and read magazines in the sun.
It was the perfect day for it. I swam for a little while but the pool felt like ice, so I spent most of the time sun-bathing.
After a few hours, we got hungry and I had a 2 for $5 coupon for Quiznos, so we took a 2 minute walk from the pool to stuff our faces with veggie subs.
I loaded mine up with every veggie they had, asked to lose the cheese, and to go light on the guac. All together on wheat bread with jalapenos, banana peppers, and pickles thrown into the mix, it made for a very tasty lunch.
When we were done lounging by the pool, we walked back to my apartment and made sangria!
I added cherries to the bottoms of the glasses for some extra flavor and fun.
It was all about the carbs yesterday, so I munched on a piece of whole wheat toast with PB at around 5 for a snack.
For dinner, I had leftover spinach and strawberry salad from Friday night.
I also had leftover veggie pizza, which I defrosted from the freezer and somehow lost the picture of. Oh well, you can imagine it, can’t you? Told you,I had a carb party yesterday!
Well, I’m off! I was hoping to make a body pump class today but think it’s cutting it too close to my restaurant review. I think I’ll just go to a spin class at 8, instead. Sweat my butt off time! Whoo!

I don’t celebrate the 4th (we celebrate the 1st in Canada, for Canada day). We went camping!
