An Ohh May Saturday

Guess who I went to lunch with today?

I love Mae! She’s adorable. More on that in a bit.

I forgot to thank you for all of your kind comments about my Sea Adventure posts [Part One and Part Two]. I’ve gotten quite a few compliments on the photos. Jeff took a lot of them. I think he should be a professional photographer, don’t you? All right, I’ll stop gushing now.

On to zee eats!

Today started with a slanted cup of life coffee.

In my favorite mug, of course. I don’t usually blog about my morning coffee but I thought my mug should have its 15 minutes.

As I was reading blogs this morning, I came across Ashley’s Simplified Banana Scramble and knew exactly what I was making for breakfast.

Drizzled with honey and topped with a spoonful of PB&Co Cinnamon Raisin PB…oh. my. yum.

My version was, without a doubt, much less appetizing to look at than Ashley’s, but still very tasty. Jeff walked in the kitchen while I was making it and look at me like I was crazy. Nothing new.

After doing a bunch of errands, and then bumming around for a bit, I was ready for lunch. As I walked into my kitchen to stare blankly into my empty fridge, my phone started ringing.

Mae saved the day! Or, my lunch, at least. She suggested Panera, and I was all for it.

I ordered the Strawberry Poppyseed & Chicken Salad. Not impressed. Do you see that tiny pile of fruit and nuts on top of the salad? That was it. The rest was lettuce. Panera Salad Fail.

Maybe it’s because I asked for it without the chicken? Somebody justify this to me because I really want to like Panera, but I feel like I wasted $7 on a bowl of lettuce.  At least I had good company.

After lunch, we ventured to Target for no other reason than to wander aimlessly and to try on dresses.

Whatcha think? It was too big on me, but I loved it anyway.

One Sweet Potato, sliced into circles. ~Tbsp of EVOO, Sea Salt, Pepper

Next time (and there will be a next time) I will do this differently.

Crumbled walnuts on top. 400 degree oven for 12 minutes.

Did I mention that my egg sandwich somehow tasted like a cheeseburger?

What?

I went with it. It was wonderful. #VegetarianEggCheeseburger

  • 1 Slice of Whole Wheat Toast, halved.
  • 1 Egg
  • 1 Thin Slice of Cheddar
  • Few Strands of Onion
  • Tomato
  • Green Pepper
  1. Saute onion in pan
  2. Add egg, then cheese. Scramble together
  3. Slide scramble onto toast, top with tomato and pepper

Best dinner I’ve had in a while.

Sweet Potato Fry Improvements: Next time I’ll mix the flax and crushed walnut in a bag, probably add shredded coconut, and then coat the potato slices in the olive oil and nut mixture. I think it was Tracey’s comment a couple days ago that inspired this creation. Thanks, Tracey! You are awesome!

Dessert was a warmed-up piece of Apple-Cinnamon Bread. Yum!

Ankle Update: Still hurts. Still dealing. Sports med. appointment on the 9th.

A few questions:

  1. Thoughts on Panera? Love? Hate? Rip off? Tell me about it.
  2. Favorite way to prepare sweet potato fries?
  3. Did you guys miss my drawing in this post, or were you trying to ignore it because I’m a weirdo? I hope it’s the latter because that will absolutely make my day[hilarous].

  • I like panera for the Mediterranean veggie sandwich and black bean soup. The Salads are worthless.

    I love sweet potato fries with cinnamon and nutmeg. Made with olive oil. They taste like dessert!

  • oh my god, I feel the same way about Panera! So overpriced for the quality of the food, I would pick Bountiful Bread any day. I always feel like if I get a salad at Panera they gip me on veggies (or in your case fruit), and what veggies they do put in the salad are wilted/not fresh. Blahh, I could go on for hours because I always argue with my friends when they want Panera and I try (usually unsuccessfully, haha) to persuade them to go to Bountiful Bread.

    I LOVE that mug! That is my favourite painting!! I was just giddy when I saw the original in NY!!!

    the SAME THING happened to me the last time I went to Panera and ordered their strawberry salad. I got 2 slivers of strawberries and I was so mad I didn’t go back. That was two years ago. hahaha!

  • I do enjoy Panera, but I don’t have high expectations for it…it’s kind of the fast food of soups and salads.

    I LOVE the looks of the sweet potato fries. I make them often, but I usually stick to olive oil and paprika or a cinnamon blend. The addition of flax and crushed walnuts sounds so yummy! I love the nut butter versions, too.

  • I like Panera but believe it or not I have never gotten one of their salads! I think their sandwiches are good, though.

    I had so much fun, even though the food was quite a bit sub-par :( … Ilove the thought of an egg-wich cheeseburger! haha You have some serious talent there- you’re like the king midas of cheeseburgers!
