Lauren came up with the brilliant idea to make Ricotta Gnocchi with Roasted Veggies with our market findings [You can check out her blog for the recipe and to watch her video of our adventure at the farmers’ market]. I was all for it because it sounded really delicious and I wanted to learn how to make gnocchi. I thought it would be really hard. It wasn’t at all.

Lauren was given the opportunity by I Can’t Believe It’s Not Butter to host the farmers’ market tour to pick up ingredients for lunch at her house. I had never tried ICBINB before, but I seriously could not believe how much it looked and tasted like real butter. I don’t eat butter that often, and when I do, I like it to be the real thing, but this wasn’t too bad.

[I went back for seconds.Don’t worry] We spread roasted garlic on the focaccia, and I topped my slice with these incredibly sweet tomatoes we found at the market. The combination of flavors was so delicious. I can’t wait to replicate this recipe at home.

Lauren also made a peach and raspberry crisp (using ICBINB):

After the best lunch ever, I left Lauren’s house to do school work at…guess where?

Uncommon Grounds

Reason # 7,825 that I love Uncommon Grounds:  You can order a WHOLE POT OF TEA. I probably had seven of them…or two.. who’s counting?

And, SURPRISE, I didn’t get a bagel!!! Shocker.

Salad

I opted for a spinach salad with roasted reds, walnuts, onions, and feta with honey ginger dressing. You read that right: honey ginger dressing. I’m in love. 

I really need to tell you guys how I’ve developed a mild addiction to the Maple Saratoga Peanut Butter I picked up at the market, but this post is already a book, and I need to go to class. Trust me, I have something like seven pictures that express how much I love this PB, and it definitely deserves a post of its own. Just you wait- you’re going to want to order some of your own!

P.S. I spontaneously decided to go to a spin class this morning. I was walking through the gym to the treadmills, and thought why not? I hadn’t been to one since before I injured my ankle and it felt awesome. It was my first real intense workout since the doctor told me I could get back into my routine. Go me!

  1. Tonight we are having lamb burgers, arugula, new potatos, heirloom tomatos and carrots all from The Saratoga Farmers Market. We shop there every week, year round, so much of our food is from that Market! Yum!
