Catching up on posts?
- I met a goat, drank some wine, and had a cupcake for lunch at the Apple and Wine Festival on Saturday.
- Jeff and I went on an adventure to Vermont for our anniversary on Thursday.
I’ve been challenging myself a lot lately. Wednesday marks the end of my no coffee for a week challenge (I love tea). This morning, I decided that I’ve been eating far too many sweets lately.
Proof: On Saturday, I had half of an apple cider donut, a cupcake, and copious amounts of honey all within a two hour period.
Especially since I discovered a cavity in my tooth last night, and now I have to go to the dentist next week to get it filled. I hate the dentist.
I don’t think I’ve had so many sweets in such a short amount of time since I started this blog.
So, that’s it. No sweets for a week. I promise. If I even mention sweets, call the police.
[Please know that I still believe in everything in moderation. I’ve just gone too far lately]
In other news, I made the most perfect whole wheat pancakes on Saturday morning.
Check out how round they are! I’m super proud. It doesn’t take much to make me happy.
I always use the batter part of Angela’s PB Coconut Swirl Pancakes for mine. It’s the perfect whole wheat pancake recipe!
I topped them with maple
syrup peanut butter and honey and called it a day.

And in regards to close friends, years ago I had a friend who lived over an hour away. When she found out I was re-diagnosed with cancer, she made a bunch of different Korean dishes that were each special for good health (she’s Korean). Then she drove down to my home to feed me. I’m still grateful for her friendship to this day
