Spaghetti has and will always be my favorite comfort food…
…especially when my mother makes it…
…with whole wheat pasta and a spicy arrabiata sauce…
…tossed with sautéed red peppers and onions, and sprinkled with parmesan cheese.
With homemade garlic bread on the side, and accompanied by a glass of red wine. Perfection.
The only thing that made this Tuesday night dinner even better was this dessert:
- 1/4 cup Fage 0% Yogurt
- 1/4 cup blueberries
- 4 or 6 almonds
- Sprinkle of toasted wheat germ
- Sprinkle of shredded unsweetened coconut
- Dark chocolate chips
- 3 or 4 crushed Late July white chocolate mini cookies
Yum times a million!
Yesterday afternoon, I had one of those lunches where I just threw everything in my kitchen onto a plate:
You’re staring at a chickpea and celery salad topped with feta, black pepper, and a spoonful of Annie’s Red Wine & Olive Oil dressing. I also threw together some homemade guac with a very ripe avocado I had sitting in the fridge. I mashed it up with garlic powder, pepper, fresh-squeezed lime juice. The guac went really well with Stacy’s Garden Veggie Medley Pita Chips. It was a weird, but delicious and filling lunch.
In other news, I managed to leave my fridge open for an entire day. I stayed at Jeff’s parents’ house on Monday night, and when I got home on Tuesday evening, the door was wide open. Thankfully, everything was OK.
Oops! Please tell me I’m not the only one who has ever done this.
Jeff is doing some repairs around his mom’s house, and I went over to “help.” Turns out, I have no idea how to correctly identify a wrench, or any tool for that matter. So I just hung around to supervise, and to provide moral support!
I’m still trying to get my new apartment in order, and as soon as I do, I’ll have pictures to prove it! Promise!

I don’t really have a favorite comfort food. The closest is homemade pizza using my mom’s crust recipe, but that’s really more my husband’s favorite comfort food
I’ve done the cumin for cinnamon mishap! I can’t remember what it went in. I remember realizing my mistake as I was dumping, and then just stood there with my mouth hanging open.
Soup is definitely my comfort food!!
Love the chickpea and celery salad. I’ve recently started buying dried chickpeas and soaking them. They are so much better than the canned versions. Can’t wait to try this one.

YUM! Each of these dishes look absolutely amazing and delicious. Pasta is one of my favorite things, and you throw onions and garlic, and it’s perfection!
One time I put my carton of milk on top of my fridge instead of in it. I just don’t know how that happened.
mom’s homemade spaghetti can never be replaced, it’s so delicious. i’m going to request it the next time i get home!
