Vacation: All I Ever Wanted

This morning, I woke up and made guacamole.


To me, mashing up an avocado and mixing it with garlic powder and lime juice is a perfectly normal Tuesday morning activity.


You see, I was slicing an avocado to smear all over my eggs (don’t judge), and realized that it had reached its perfect stage of ripeness. You know, the point where an avocado is just so bright green, and so incredibly soft, that to not turn it into guacamole would be an outright denial of its true potential. It’s kind of like a caterpillar turning into a butterfly. It just has to happen, ya know?


Anyway, that train of thought is how I wound up making guacamole at 9:30 this morning.


It will probably all be gone by tonight. 

Jeff and I returned from our beach vacation on Thursday night.  I just unpacked this morning. Because the goal of our vacation was to achieve a state of complete relaxation, I was not in blogger-mode (Let’s ignore the fact that I haven’t been in “blogger-mode” for most of July).

Our hotel was right on the boardwalk, and we spent most days alternating between the pool and the beach. I subsisted mostly on veggie burgers and salads because those were about the only vegetarian options available.

However, on our last night there, I devoured the most delicious grilled cheese sandwich of my life:

It was made with fontina and asagio cheeses, basil pesto, and tomatoes, and came with a tomato bisque that when paired with the sandwich resulted in melt-in- your-mouth bites.

Overall, we had a great time. I’ve been super stressed these past few months (stressed=not blogging), so getting away for a few days was a nice break for me.

I’m going to leave you with a picture that wasn’t taken on vacation, but at dinner with friends a few weeks ago. Looking through pictures from that night, I realized I was doing the same thing in every picture taken of me: drinking wine.

Drinking wine It’s my true calling, I guess. 🙂

  1. I think that train of thought makes sense 😉 Guacamole in the morning should always be part of a complete breakfast, haha. Glad you had a relaxing vacation! I went to Europe in May/June for a bit but it was really enjoyable. And my favorite thing to do is eat, lol. Experiencing foods from other regions is always a blast!

  2. I totally know what you mean about the avacados … they are so very rarely perfect.

    We are going camping with friends for 10 days this summer, and I am really excited for that.

    I don’t work in the summer, so every day feels like a vacation 🙂
