Oh, hello there! Guess what I did Sunday morning?
Last week, as I was sitting at my desk at around 8 a.m., I was suddenly struck with an intense urge to make sweet potato and kale soup.
As soon as the thought entered my mind, I grabbed a notepad and started to jot down ingredients.
And then, completely out of nowhere, I thought of curry, and in that moment I knew what I had to do. I wouldn’t just make sweet potato and kale soup, I’d make Curried Sweet Potato & Kale Soup.
And then my head exploded.
Let me just get these two things out there:
- Before Sunday, I’d never curried anything in my life.
- I’d also never created a soup recipe completely from scratch. Ever.
It didn’t matter. I was on a mission.
When Jeff and I wandered into the produce section at Wegmans on Saturday afternoon, I still had no idea what I was doing. But, somehow, I figured it out.
And, let me tell you, this soup is delicious. The combination of roasted sweet potatoes, warm curry spices, and crunchy kale makes it the perfect fall soup. (It’s even vegan!)
Serve it with crusty bread on a chilly night and you’re good to go!
