Some Things I Really Loved This Week (#12)

Hey friends heyyyyyy! How’re you doing? How’s your week been? Mine’s been absolutely nuts with lots of last-minute Christmas shopping and preparations for our trip to New York! We leave today and will be staying in the DC area for two nights, then heading up to my hometown to spend Christmas and the rest of the year with friends and family. I’m so excited!!

This is likely the last Some Things I Really Loved This Week 0f 2018. I have one more blog post planned for next week but I won’t be blogging any more than that so I can spend time with my family. I’ll be on Instagram though- I’m always on Instagram. So make sure to follow me there.  I plan to write a full trip recap when I get back!

OK, SO, without further ado, welcome to the 12th edition of Some Things I Really Loved This Week,  a post where I highlight things that I experienced over the past week that made me happy, inspired me or made me laugh with the hope that maybe they’ll make you happy, inspire you or make you laugh, too!  Feel free to tell me about some things that YOU really loved this week in the comments!

We hosted a holiday potluck at our house on Saturday night and it was so much fun! I realized after the fact that the only picture I took was of 0ur Roots Hummus spread. Oops! I made Ravioli Alla Vodka and doubled the recipe, which I definitely do not recommend doing because I wound up with wayyyyy too much sauce and ended up having to make extra pasta and then still had to freeze some. Not a horrible problem but good to know for next time. The sauce itself was great. It was my first time making vodka sauce at home and while it was close to restaurant quality, I’m excited to experiment with other recipes until I get it just right. I also made a Pear-Apple-Gorgonzola Salad which is one of my go-to potluck dishes because it’s so easy and so, so good. Just mix a bunch of lettuce (spinach or spring mix) with chopped apples, pears, pecans, dried cranberries, and gorgonzola. Serve it with creamy balsamic vinaigrette and tada, you’re all set!

Our friends Leila, Katherine, and Doug held a joint birthday party at Pack’s Tavern on Monday night. I asked our waitress whether to go with a black bean burger or the mushroom philly and she said, “I hate philly cheesesteaks, go with the burger.” So I went with the philly just to be defiant and it was seriously delicious. If Jeff liked mushrooms I’d try to replicate it at home.  Listen to this: roasted mushrooms, caramelized onions, roasted red peppers, pepper jack and sriracha mayo on toasted ciabatta.  Sweet potato fries on the side obviously. If you’re local you should probably go get one. If not, make it at home and send me pictures.

On Tuesday I attempted to shop for everyone on my Christmas list in one day and failed miserably. BUT, before that, I met Holly at High Five Coffee and she surprised me with the blue travel mug I wanted! She’s so great! Don’t worry, in true clumsy Rebecca fashion, I immediately knocked it off the high-top table we were sitting at onto the floor.  You can’t bring me anywhere.

On Wednesday, Jeff and I had dinner with our friends Amanda and Steffen at White Labs Kitchen & Tap. Everything was delicious but this Cranberry Orange Buttermilk Chess Pie stole the show. My Instagram friend Logan just happens to be the head baker at White Labs and I could seriously eat nothing but her desserts for the rest of my life. If you go to White Labs for no other reason than to eat her amazing creations you will not be disappointed. No other pie will ever compare. THAT’S A CHALLENGE, LOGAN!

I tested my Back Squat and Front Squat this week and got two new PRs! (I’m testing my deadlift today but this post will already be up). On Monday I back-squatted 160 pounds and on Thursday I front-squatted 145. I’m so happy with how much my strength has increased in these movements since I last tested in September. My back squat has gone up 20 lbs and my front squat has gone up 15.  Next cycle I’m going to work on trying to get out of my head when the weight gets heavy because I’m obviously physically capable but I psych myself out. Huge thanks to the coaches at Strength Ratio for helping me get this far!

The other day I caught myself thinking a little too long and a little too hard about whether or not to add a silly video of myself to my story.⁣⁣ .⁣⁣ My thoughts went something like this: Is this too weird? Will people think this is stupid? Will they stop watching my stories if I post this?⁣⁣ ⁣⁣ Then I stopped and asked myself one very important question: who cares? ⁣⁣ ⁣⁣ When I first started blogging in 2009 I thought I had to write in a certain voice, post certain pictures, and follow certain trends for people to want to read my blog. It was tiring.⁣⁣ ⁣⁣ It didn’t take long for me to drop the act and when I did, I actually gained more readers because I was showing my true personality.⁣⁣ ⁣⁣ I am ridiculous. I have an extremely silly sense of humor. I struggle with mental illness: anxiety, ocd, and depression to be exact. My hair is always a mess. I don’t wear makeup. I’m not fashionable by any means. My house decor is not and never will be Pinterest-worthy. I don’t eat super healthy, colorful smoothies or quinoa bowls. In fact, I eat a lot of boxed macaroni and cheese (the kind that’s shaped like bunnies bc they taste better). I honestly have no idea what I’m doing most of the time. I’m pretty socially awkward and shy. I hate huge crowds and given the choice between a night out and sitting on my couch with my cat and Netflix, I’d choose my couch every single time. ⁣⁣ ⁣⁣ What I’m trying to say is that life is too short to be anything other than yourself. I’m a real person and if people don’t like the REAL me, it’s their problem and none of my damn business. ⁣ ⁣ I’m posting this photo with this rant because it’s one of my favorites. It was taken at dinner the night I found my wedding dress and it’s a perfect depiction of my relationship with @jroseavl . I’m completely ridiculous yet he married me anyway.

  1. That pie looks amazing! Yay for new personal records too! Also that quote is so great, although it’s hard to remember it in the moment. And looking at the bottom of gift bags, I’m definitely guilty of that haha and the conditioner thing is so true! Can’t wait for you to get to NY!!
