You go to Trader Joe’s specifically to get cauliflower rice and cry when they say they’re out.  Then buy 300 things anyway, including this Black Bean Rotini.

Trader Joe's Black Bean RotiniFrom TJ’s website …pasta made with 100% black beans. No grains; just beans. The beans are dried and ground into a flour-like consistency, combined with water and formed into a Rotini or spiral shape…Unlike traditional pasta, this Organic Black Bean Rotini delivers 14 grams of protein and 15 grams of fiber in every serving.

Which turned out to be the perfect pasta to have with cauliflower quinoa meatballs!

Who says vegetarians don’t get enough protein!?

In case you missed it the first time, here’s the recipe! Definitely a keeper! Though prep was VERY messy and took a bit of time. Still super delicious!

You take 500 shots of your yoga mat covered with physical therapy props just so you have a picture to go with the recap of your PT appointment.

Physical Therapy

A couple  weeks ago I mentioned that I was going to physical therapy for my hip.  Even though I went for three months post-surgery, my hip has been bothering me in yoga and my instructor recommended I get it checked out again. So I made an appointment with a therapist who specializes in therapeutic yoga.  Well, I saw her yesterday and she thinks I’m doing everything right but that my muscles are just a bit tense, especially my psoas muscle and my glutes.  We did a few really effective stretches and then she used Active Release Technique (ART) to relieve the tension in the front and side of my hip.  My hip felt great afterward and I left with appointments for the next several weeks.  We are going to work more on strengthening and loosening up my muscles and I’m also going to do aquatics therapy once a week. Time for a new bathing suit, I guess! All in all, it was a pretty positive experience and I can’t wait to go again!

You make your sick fiance a bowl of chicken noodle soup but don’t give it to him until you take a picture to post on social media.

You know you’re a healthy living blogger when…

You make oats in a jar (OIAJ) for breakfast and then strategically place it on top of your coloring book for a picture.

Coloring Book and Oats In A Jar

I’m not almost 29 or anything,

Untitled design (2)

My friend Dara gave me this coloring book for Christmas and I find it really helpful when I’m stressed out or when I want to take pictures of oats with an interesting background!

And with that, I’m off to do the 30 Day Shred!

Who is Rosey Rebecca?

And, Friday, that too, Happy Friday!

In case you forgot, this is what my blog looked like yesterday:

Old Rosey Rebecca Layout

Different, huh?

Jeff and I have been working behind the scenes for a couple weeks now. My blog hasn’t had a makeover since 2010 and it was feeling just a but cluttered and outdated to me. For those of you who don’t know, Jeff is a genius when it comes to computer stuff. I, on the other hand, am not.  I’m ALL about writing, taking pictures, and spending my whole life on social media, but when it comes to coding? Nope. Not for me. That’s why I’m super lucky Jeff can help me with techy stuff.  When he redesigned my blog in 2010, I paced back and forth behind him, asking every five minutes if it was done yet and probably drove him mad. This time we bought an easy, customizable theme and there wasn’t as much pacing. Jeff declared it an early birthday present, and all I could think was you know you’re a blogger when…your fiancé buys you a website theme for your birthday.  That’s true love, dontcha think? ROSEY REBECCA HEADER- Designed by Dara

You know what else is awesome? My best friend, Dara, is a real, live graphic designer and she’s VERY talented. So of course I went straight to her for my new header. I’ll admit that I’m kind of a pain to work with because I’m super picky about my visions but don’t quite know how to express them. Luckily, Dara and I have been friends since preschool so when we have a conversation like the one below, she totally gets what I mean. Our design process went something like this.

Dara: Here you go! What do you think of this?

Me: OMG I LOVE EVERYTHING ABOUT IT! … But can you change the font? …And the colors? ….And the size?

Dara: Sure. What kind of font do you want? What colors? What size?

Me: I don’t know…Something cool?… and pretty? You know, just like that…but different…

Dara: OK, I totally understand. Here you go!

But seriously, Dara’s design work is AWESOME. Check out the Save The Date she designed for our wedding.

save the date dara

Do you think we’re having a barn wedding?

If you thought I was bad with the header design, our Save The Date took us a whole week to perfect. She’s also designing our invites, which I imagine will take three months. If you need any design work done, for your blog or otherwise, I definitely recommend getting in touch with her. Shoot me an email at if you’re interested!

Back to the redesign, I really wanted something cleaner and a bit more professional and I think we accomplished just that! I love the new layout and hope you do too. I’m always happy to hear your thoughts, so please let me know what you think!

Since we’re focused on the blog right now, I thought it would be fun for new readers (and old!) if I answered a few questions about my blog, how it came about, and what exactly I’m doing here.  But since I also have a lot of food I want to show you, I thought maybe I could just throw those pictures in randomly and we can just act like it’s totally normal. Sound good? Ok, here we go!

How long have you been blogging? I started this blog on May 25, 2009. It began as a weight loss blog where I tracked everything I ate and all of my workouts. When I first started blogging, I took photos with my old flip phone and they looked HORRIBLE. Don’t believe me? Check out my first post. For some reason, that didn’t deter people from reading, which is absolutely awesome because I’ve made so many blog friends (blends) along the way.

Why Rosey Rebecca?  Well, a few reasons. I’ll give you the most honest reason first: when I started blogging I had no idea what I was doing and never though anyone would read it. My middle name is Rose and I had a Rosey Rebecca email address at one point so I thought, why not? Second, and perhaps the more ridiculous reason, Jeff’s last name is Rose, so when we get married, my name will be Rebecca Rose Rose. No, seriously. My name will be Rebecca Rose Rose. I had to say it again just to convince you.

Oats In A Jar (OIAJ)

Why do you blog? Simply put, because I love it. I love everything about it: writing, telling stories, sharing recipes, talking about my workouts, documenting the places I’ve been, and sharing my life with you! I love the community and the friends I’ve made through blogging. I love helping and inspiring people to live healthier lives. I love that I have an outlet to talk about why I became a vegetarian, my breast cancer scare in 2010, and, probably the hardest, losing my father in 2011. Mostly I love having a space where I can share, inspire and motivate.

But, who are you?  I’m Rebecca. Duh. I’m a 28-year old (almost 29) foodie, who loves cooking, eating and exercising, specifically yoga, hiking, weight-lifting and spinning. I’m also addicted to pizza, avocados and coffee. Don’t judge.

Where do you live?  Jeff and I moved to Asheville, NC in September 2015. Before that we lived in the Washington DC metro area for around four years. BEFORE THAT, we lived in Albany, NY, where I started this blog. We were there for school, but we both grew up in downstate NY, about 30 miles north of NYC.

What do you do? Quite honestly? Right now, I write this blog and live in coffee shops. When we lived in the DC area, I worked at a market and as an editorial assistant. In Albany, I was in college and worked a WHOLE BUNCH of retail jobs. I went to school for journalism, so I also interned and freelanced for a local paper.

So there you go, a little Q&A about me and this blog. Let me know if there is anything else you’re dying to know.  I’d love to know more about you, too! Feel free to introduce (or reintroduce) yourself in the comments. I love making new friends and learning new things about long-time readers! And please do let me know what you think of the new layout! Hope you love it as much as I do!

Have a great weekend!
