POW! <— that just felt appropriate.
What can I say, I’ve just been busy eating frittatas. You’ll need to make this frittata to fully understand, and don’t you worry, I’ll include an easy recipe at the end of this post.
BUT FIRST! We have a few things to catch up on!
- I am SO glad I’m not the only one who hate-watches shows. I talked about this in my last post, but basically, I define ‘hate-watching’ as the act of compulsively watching a show even when it’s so horrible that it makes you cringe. Currently, I am hate-watching Unbreakable Kimmy Schmidt. If you love this show, I’m sorry in advance for all the horrible things I have to say about it. It literally makes me want to pick up my TV and throw it off the balcony. I already broke one of our TVs when I dropped my bike on it (that’s a story for another blog post), so I’m really hoping I can control my rage this time. I am about half-way through season two and I really can’t explain how I’ve gotten this far. It makes me mad just to think about it. I think someone needs to cut me off.
- On the complete opposite side of hate-watching, however, I am LOVE-WATCHING Game of Thrones. Anyone else? I find that it is so easy to accidentally see spoilers about this show on the internet so that’s all I’m going to say about it. I will say, though, if you don’t like this show, I don’t think we can be friends.
SALAD BREAK:
Farmers’ Market Lettuce Mix with Celery, Avocado, Feta, and Roasted Rosemary Chickpeas (400 degree oven, chickpeas coated in olive oil, rosemary, salt, pepper, bake for 30 minutes- tada!) Drizzled with balsamic vinegar, lemon juice and olive oil.
BACK TO LIFE UPDATES! More specifically, fitness updates!
- I went to spin class THREE TIMES this week. During my last class I finally wore my shoes from my road cycling days and it really made a difference. I definitely recommend cycling shoes for both road biking and spin class. Here is a great article on the pros and cons of cycling shoes.
- My Physical Therapist has been using Dry Needling on my hip, and it’s worked like a charm. My hip feels almost 100% better.
- One of my favorite spin instructors is also a personal trainer. When I mentioned that I’m trying to get into the best shape possible for my wedding in October (my first dress fitting is in July eeeeeee!!!), she had me schedule a free training consultation. I’m going to continue going to spinning three times a week and hopefully throw in some more strength training (I’m only doing yoga now- and OMG the planks and chaturangas!)
And now, for some Strawberry-Banana Oats…
In the bowl: 1 cup water, 1/2 cup old fashioned oats, 1 sliced banana, cinnamon, shredded unsweetened coconut, topped with fresh, local strawberries, PB and more coconut.
WEDDING UPDATES!
- So I already mentioned that my first dress fitting is in July! I’ll be going up to New York for a few weeks to visit friends and family, attend my BRIDAL SHOWER, and have two dress fittings.
- My bridesmaids are coming down to Asheville in two weeks for a girl’s weekend and I am SO EXCITED. We’re having our hair and makeup trials at Adorn Salon in downtown Asheville and we will likely be there for three hours but it’s ok because they have a cute bridal suite for us to hang out in and there will be MIMOSAS.
- We just finished finalizing our invites with my best friend Dara (my matron of honor), who is a very talented graphic designer. I really love what she came up with and I’m so excited for our friends and family to receive them! I’m sending the files to the printer today so I anticipate my hand falling off from addressing envelopes sometime next week.
- I met with a florist last week and OMG flowers are expensive. I’d heard this before but it’s one of those things that I really didn’t acknowledge until I experienced it firsthand. Weddings are just expensive, man.
- I spent this morning updating our wedding website with things to do in Asheville. I started on the page of places to eat, but that’s going to take me a bit longer since I am in love with almost every restaurant in Asheville.
Ok, enough of that, here’s the frittata recipe I promised you!
Asparagus & Mushroom Frittata
Serves 8 (or 4, depending how hungry you are!)
Ingredients:
- 1-2 TBSP Butter
- 1 Yellow Onion, Chopped
- 1 Bunch of Asparagus, Chopped
- 1 Cup of Cremini Mushrooms, Chopped
- 8 Eggs
- 1 TBSP Whole Milk
- 1/4 TSP Salt
- 1/8 TSP Pepper
- 1-2 Cups of Spinach, chopped
- 1/2-1 Cup Feta Cheese
Directions:
- Preheat oven to 400 Degrees
- Heat butter in a large, oven-safe frying pan over medium heat, add onion, asparagus and mushrooms, cook until tender, 5-10 minutes
- While veggies are cooking, whisk together eggs, whole milk, salt and pepper in a mixing bowl. Stir in greens and feta cheese
- Pour egg mixture over veggies in frying pan and let cook until eggs are set, around 5 minutes
- Transfer pan to oven and bake for 10 minutes, or until top is completely cooked through
- Remove from oven and let cool 1-2 minutes before sliding the frittata onto a plate
- Cut into 8 pieces, like a pizza, and enjoy with toast and fresh fruit on the side
