Busy Eating Frittatas

Hi! Hello! Happy Friday!

I disappeared again for a bit, but here’s a frittata:

Veggie Frittata

You’re welcome.

Ok, bye!

Just kidding.

Here it is again!

Veggie Frittata

POW!  <— that just felt appropriate.

What can I say, I’ve just been busy eating frittatas.  You’ll need to make this frittata to fully understand, and don’t you worry, I’ll include an easy recipe at the end of this post.

BUT FIRST!  We have a  few things to catch up on!

  • I am SO glad I’m not the only one who hate-watches shows.  I talked about this in my last post, but basically, I define ‘hate-watching’ as the act of  compulsively watching a show even when it’s so horrible that it makes you cringe.  Currently, I am hate-watching Unbreakable Kimmy Schmidt.  If you love this show, I’m sorry in advance for all the horrible things I have to say about it. It literally makes me want to pick up my TV and throw it off the balcony.  I already broke one of our TVs when I dropped my bike on it (that’s a story for another blog post), so I’m really hoping I can control my rage this time. I am about half-way through season two and I really can’t explain how I’ve gotten this far. It makes me mad just to think about it. I think someone needs to cut me off.
  • On the complete opposite side of hate-watching, however, I am LOVE-WATCHING Game of Thrones.  Anyone else? I find that it is so easy to accidentally see spoilers about this show on the internet so that’s all I’m going to say about it.  I will say, though, if you don’t like this show, I don’t think we can be friends.

Farmers’ Market Lettuce Mix with Celery, Avocado, Feta, and Roasted Rosemary Chickpeas (400 degree oven, chickpeas coated in olive oil, rosemary, salt, pepper, bake for 30 minutes- tada!) Drizzled with balsamic vinegar, lemon juice and olive oil.

BACK TO LIFE UPDATES! More specifically, fitness updates!

  • I went to spin class THREE TIMES this week.  During my last class I finally wore my shoes from my road cycling days and it really made a difference.  I definitely recommend cycling shoes for both road biking and spin class.  Here is a great article on the pros and cons of cycling shoes.
  • My Physical Therapist has been using  Dry Needling on my hip, and it’s worked like a charm. My hip feels almost 100% better.
  • One of my favorite spin instructors is also a personal trainer. When I mentioned that I’m trying to get into the best shape possible for my wedding in October (my first dress fitting is in July eeeeeee!!!), she had me schedule a free training consultation.  I’m going to continue going to spinning three times a week and hopefully throw in some more strength training (I’m only doing yoga now- and OMG the planks and chaturangas!)

And now, for some Strawberry-Banana Oats…

Strawberry Banana Oats

In the bowl: 1 cup water, 1/2 cup old fashioned oats, 1 sliced banana, cinnamon, shredded unsweetened coconut, topped with fresh, local strawberries, PB and more coconut.

  • So I already mentioned that my first dress fitting is in July! I’ll be going up to New York for a few weeks to visit friends and family, attend my BRIDAL SHOWER, and have two dress fittings.
  • My bridesmaids are coming down to Asheville in two weeks for a girl’s weekend and I am SO EXCITED. We’re having our hair and makeup trials at Adorn Salon in downtown Asheville and we will likely be there for three hours but it’s ok because they have a cute bridal suite for us to hang out in and there will be MIMOSAS.
  • We just finished finalizing our invites with my best friend Dara (my matron of honor), who is a very talented graphic designer.  I really love what she came up with and I’m so excited for our friends and family to receive them! I’m sending the files to the printer today so I anticipate my hand falling off from addressing envelopes sometime next week.
  • I met with a florist last week and OMG flowers are expensive. I’d heard this before but it’s one of those things that I really didn’t acknowledge until I experienced it firsthand.  Weddings are just expensive, man.
  • I spent this morning updating our wedding website with things to do in Asheville. I started on the page of places to eat, but that’s going to take me a bit longer since I am in love with almost every restaurant in Asheville.

Ok, enough of that, here’s the frittata recipe I promised you!

Asparagus & Mushroom Frittata

Serves 8 (or 4, depending how hungry you are!)

  • 1-2 TBSP Butter
  • 1 Yellow Onion, Chopped
  • 1 Bunch of Asparagus, Chopped
  • 1 Cup of Cremini Mushrooms, Chopped
  • 8 Eggs
  • 1 TBSP Whole Milk
  • 1/4 TSP Salt
  • 1/8 TSP Pepper
  • 1-2 Cups of Spinach, chopped
  • 1/2-1 Cup Feta Cheese

  1. Preheat oven to 400 Degrees
  2. Heat butter in a large, oven-safe frying pan over medium heat, add onion, asparagus and mushrooms, cook until tender, 5-10 minutes
  3. While veggies are cooking, whisk together eggs, whole milk, salt and pepper in a mixing bowl. Stir in greens and feta cheese
  4. Pour egg mixture over veggies in frying pan and let cook until eggs are set, around 5 minutes
  5. Transfer pan to oven and bake for 10 minutes, or until top is completely cooked through
  6. Remove from oven and let cool 1-2 minutes before sliding the frittata onto a plate
  7. Cut into 8 pieces, like a pizza, and enjoy with toast and fresh fruit on the side

There you have it! Get busy eating frittatas with me! They’re delicious!

Now I’m running out the door to have lunch with Jeff downtown. Super excited to meet Farrah and Julie for lunch next week! Blogger dates are so much fun!

What have you been up to?

Have a great weekend! <3

February Things

So, Jeff may have convinced me to buy a Christmas Tree Farm. In Vermont. For One Million Dollars. Because who doesn’t need a Christmas Tree Farm, right? RIGHT?

Anyway, Hi! What’s up? How are you guys doing? I have a bit of a cold but I’m dealing with it by stubbornly drinking coffee even though I should probably be drinking tea. Logical, right?

I know we haven’t talked here in a while, but if you follow me on Facebook, Twitter or Instagram, you know that some pretty major things have happened since I last blogged.

Like this:

That’s right. I ate that WHOLE CAKE with my bare hands. Kind of like that kid from Matilda.

Oh yeah, and Jeff and I got engaged! SURPRISE!

Jeff proposed on a sunny Sunday in early October. I was seriously convinced we had actually moved to the Pacific Northwest because it literally rained nonstop for our first three weeks in Asheville. I was dying to go apple picking so at the first sign of sun that Sunday, we hopped in the car and headed to Sky Top Orchard, with everyone else in Western North Carolina.

After picking five pounds of apples — Seriously, I don’t know what I was thinking — we decided to take a drive on the Blue Ridge Parkway and ended up at Mount Mitchell.

I didn’t think anything of it when Jeff suggested we stay on top of the mountain until sunset or when he pulled his jacket away when I tried to take it because I was cold (the ring was in his pocket!)

After a while, the peak of the mountain became completely engulfed in a cloud. I was starting at the sky, thinking this would be the perfect time for a proposal when Jeff tapped me on the shoulder.  I looked down and he was on one knee with a box in his hand. I don’t remember this but apparently my first response was “WHAT ARE YOU DOING?” My second response, of course, was “yes.”

SO my life since then has pretty much looked like this:

wedding planning mug

Because, as I’ve learned over the past few months, your face just kind of settles into that “I’m going crazy” position when you’re planning a wedding.

In the interest of keeping most aspects of the wedding a surprise for our family and friends, I most likely will not be posting many wedding planning details on the blog.

What I WILL tell you is:

  • We’re getting married this fall on a farm with beautiful mountain views and ANIMALS to pet.
  • Our guests are traveling from all over to help us celebrate.
  • I went dress shopping with my mom and bridesmaids in January and said YES to a dress.
  • More importantly, the FOOD is going to be a delicious mix of vegetarian and non-vegetarian fare. Our caterer like the menu I designed so much that she’s using it as a mock-up for other couples. What can I say, I’m obsessed with food!
  • We have our CAKE TASTING tomorrow and the bakery we’re going to has Pie Cakes. Yes, PIE CAKES. Entire pies baked into entire cakes. I know, I died a little too.

Oye! I remember posting about our FIVE YEAR dating anniversary back in 2010! We’ll be together 11 years by the time we get married. I can’t wait!!

Well, that’s all for now, blogfaces! You may have noticed that my site looks a little different. That’s because I finally decided that it’s time for a redesign! I’ll be (slowly) working on it for the next couple weeks so stay tuned!

Have a great day!! <3
