I <3 Summer Produce

Is anybody else ridiculously happy that it’s summer? Aside from the warm weather and countless outdoor activities, my favorite thing about summer is the seasonal fruits and veggies. Today was full of ’em.

We’ve already discussed my blueberry obsession, so it should come as no surprise that the whole wheat blueberry pancake that I made for myself this morning was more blueberry than it was pancake.

I threw together a bulk mix of the dry ingredients for my go-to pancake batter so I can just whip it out and add eggs and milk whenever Jeff and I want pancakes. (Note: I only use the batter part of this recipe. Not that I don’t think the PB and Coconut Swirl idea is awesome. It is, I’ve tried it! I just like plain pancakes better)

When I broke down the recipe to make one pancake, I realized that it called for 1/4 of an egg. How the heck do I do that? I sort of just guessed and scrambled up the leftovers. The finished product was very tasty so I must have done something right!

I inhaled the pancake after getting back from an upper body and abs class at the gym. I used 6 lb free weights for the majority of the class and felt really strong! Afterward, I hopped on the treadmill and walked on an incline for 30 minutes. Gotta tone the booty. ๐Ÿ™‚

Lunch today consisted of a leftover veggie burger from yesterday’s BBQ heated on the George Foreman Grill. I topped my burger with tomato and sauteed red onions. I also roasted zucchini, summer squash, and potatoes in the oven at 400ยฐ for ten minutes.

I ate my “burger” on an Arnold Sandwich Thin. It was a very nutritious and summery lunch.

For dinner, Jeff and I decided to try out Buitoni Whole Wheat Four Cheese Ravioli.

I received a coupon for a free package a couple weeks ago from the Foodbuzz Tastemaker Program. There are a variety of different kinds of Buitoni pastas and sauces but I had little to choose from at the grocery store I went to, so I ended up with the whole wheat four cheese. I would have loved to try the Wild Mushroom Agnolotti. I don’t even like mushrooms but it sounded interesting. Unfortunately, I had to choose from what was available at my local grocery store.

While the ravioli was cooking, I got the sauce ready.

I love Muir Glen! All of their sauces are so good!

My plate:I had more squash and zucchini with dinner. I also steamed some baby carrots and Jeff made corn on the cob.

Verdict: I did not like the four cheese ravioli. I couldn’t taste the cheese most of the time and I think I would have enjoyed the ravioli more if it had more of a filling. I will not be buying the four cheese kind again. I may try a different variety, though.ย  The rest of my dinner was fabulous. How could summer veggies not be?

Dinner concluded perfectly with a small piece of blueberry cake leftover from Saturday.

Oh man! So good.

Now, I’m off to stuff my face with popcorn and watch The Hangover with Jeff. Love that movie!

Pancakes, Pizza, and Peanut Butter

Since I am super behind on posting and today is my first day of classes, I decided to skip taking pictures of most of Tuesday’s eats. I did capture some of the highlights though. ๐Ÿ™‚

But let’s start with Monday, shall we?

I made an awesome, perfectly round pancake on Monday morning.

Seriously? Check that out! How did I do that? I usually splatter batter all over the pan.

My pancake recipe was adapted from Angela’s Healthy Peanut Butter Coconut Swirl Pancakes. I just eliminated all of the peanut butter and coconut maple syrup and made plain old whole wheat pancakes.

I ate one and a half with a Tbsp of TJ’s Maple Agave Blend on top. Plus a MorningStar Farms Veggie Sausage Pattie and some grapes.

After breakfast, Jeff and I went out to do some errands and saw this along the way:

ISN’T THAT AMAZING? I want that guy to come dance on my balcony! In case you’re wondering, Jeff was listening to Car Talk on the radio.

I made Grilled PB, Banana, Dark Chocolate Chip & Cinnamon Sandwiches for Jeff and I for lunch.

That’s a wholelotta cinnamon. I might have overdone it.

Plus more grapes and baby carrots on the side.

I was feeling very snacky during the day on Monday.

Pita Chips with Sabra Chipotle Hummus

Peanut Butter Puffins with Vanilla Soy Milk
1/2 Arnold Sandwich Thin with Saratoga PB Co Monkey Boy PB (Banana Raisin PB)

At least all of my snacks were yummy!

For dinner, Jeff and I decided to try MorningStar Farms Veggie Chik’n Nuggets

I don’t know how I feel about MorningStar Farms. On one hand, I think all of their products taste really good. But on the other hand, I don’t like how processed their products are. Thoughts? Can anyone suggest another brand?

I was surprised that the veggie chik’n nuggets tasted exactly like chicken chicken nuggets.

We also made a box of Annie’s Organic 5-Grain Elbows & White Cheddar with peas mixed in.

After dinner, I did level 1 of the 30 Day Shred. I swear I’ll get to level 2 someday! ๐Ÿ˜‰

Dessert looked like this:

A small bowl of Edy’s Slow Churned Mint Chocolate Chip Ice Cream with dark chocolate chips on top.

Tuesday’s Highlights:

Lunch: Another MorningStar Farms product (that’s 3 in 2 days!). Spicy Black Bean Burger on an Arnold Sandwich Thin with Sabra Chipotle Hummus, Frank’s Red Hot, Romaine, and Tomato slices. Plus leftover Annie’s Mac & Peas and grapes on the side. Delicious!

Surprise package waiting when I got home from the gym: Allison’s EO Giveaway Prize!!! The whole shipping box smelled like lavander! I am sooo excited to try everything!

Dinner: I made a Veggie Pizza using Jenna’s Best Pizza Dough recipe. It really is the best pizza dough!

Plus salad. You can never have too many veggies!!

Dessert: Eating Well Spice Cake that my brother, Adam, gave me to take home. He made it for New Year’s and thought I would like it because it’s made with healthy ingredients. He was right. I loved it!

Topped with Monkey Boy PB & Dark Chocolate Chips and heated in the microwave for 10 seconds. Perfect! (Don’t knock it till you try it people)
