Healthy Party Food & Giveaway Winners

Happy Tuesday night! I hope your week is off to a great start! Mine is pretty good so far. I just got home from dinner with this lovely lady. We had a great time and so much to talk about. I love blogger meet-ups!  More on that later this week.

I have a lot to talk about, so let’s get to it, shall we?

Now that we’ve gotten that out of the way, let’s talk about this:

Two weekends ago, Jeff and I were invited to a Superbowl Potluck at one of our friend’s apartments. I immediately offered to make Macaroni & Cheese.


When it comes to making Mac & cheese, I have one tried and true recipe that I’ve been using for years (please ignore the fact that it’s called Bacon Mac). It’s from Cooking Light magazine, and always, always comes out right.

Note- the magazine you see in pictures below is the actual issue that I originally found the recipe in. I believe it’s from 2008 I don’t know how it’s not covered in cheese

For this particular occasion, I doubled the recipe.

If you decide to make this recipe, please be prepared to grate cheese for what feels like days. Trust me, it’s worth it.

I love this recipe in particular because it takes a comfort food classic and lightens it up. It uses skim milk, whole wheat pasta and no cream whatsoever. Yet, the final product is incredibly creamy and delicious.

Another reason to love it is that it serves as a base for so many different variations. A couple years ago, I made it with black olive and roasted red pepper cheddar, and threw in broccoli and roasted red peppers to jazz it up a bit. I kept it simple this time around with just cheese and scallions.

Jeff wanted to make something for the party, too, so I suggested he make pepperoni pizza rolls!

These were incredibly easy to make. I whipped up a batch of my favorite pizza dough while Jeff looked up ideas on how to make the rolls online.

We decided to use the directions we found on this blog as a guideline. I was jealous of Jeff’s pizza rolls, so I made a vegetarian version with roasted red peppers and mozzarella

RRPs(Please excuse how, ahem, seasoned this baking sheet looks. We’ve had it since we lived in Albany. We’ve since purchased a shiny new one)

We rolled out the dough and used a cup to make the perfect-sized shells.


Then we filled each shell with the ingredients and folded each side up over the other until we had little dough balls.

Then we placed them seam-side down in two greased pans (roasted red pepper in one, pepperoni in the other)…


…brushed them with an egg wash…

…and then sprinkled them with garlic powder, oregano and parmesan cheese. We popped them into a 425 degree oven for around 20 minutes, and then…

Perfection! We heated up store-bought pizza sauce for dipping.

They were a hit at the party! So was the mac & cheese, which I topped with more cheese and whole wheat bread crumbs and then popped in the oven once we got there.

Back-to-Blogging Party Post

And I’m back! Are you still here? Hope so!

Thank you to everyone who commented, tweeted, and e-mailed when I announced my unexpected break from blogging. I know many of you are wondering what happened, but I’m not ready to discuss that yet. The past two weeks have been very difficult for me and for those close to me, but I have faith that everything will be OK.

So, I’m calling this a party post because I have a lot of fun things to talk about! Such as the winners of my CalNaturale Svelte giveaway. I apologize for the late announcement, but late is better than never, right? What’s a party post without prizes!?

So, seven things about myself, eh? I seem to remember writing a post with ten random facts about myself back in August, so I have to be careful not to repeat myself, because that would be boring. Here goes nothing:

Fact One: I am a pizza snob.


I grew up 40 minutes outside NYC, with my father and two brothers, who are even bigger pizza snobs (my mother doesn’t care as much. She worries more about books). My family has traveled miles and miles for good pizza. I can tell you if a slice is going to be good just by looking at it. I am not the kind of snob who refuses to eat crappy pizza at a party. I just know the difference. (Note: Two weekends ago, I ate three slices of the pizza you see above- it was that good)

Fact Two: My brother, Adam, is 10 years older than me. He started teaching English at my high school when I was a freshman. My first locker was right next to his classroom, and he used to write me late passes all the time. (He’s all the way to right in the picture below)


My other brother, David (all the way to the left), is six years older than me. He just turned 30 on the 10th.

Fact Three: I had my first sip of alcohol on my 21st birthday. I had no desire to drink before that. My first drink was a Malibu Bay Breeze. It was made by a bartender at a club called Cabaloosa’s in New Paltz, NY. It was 80’s night, and Cyndi Lauper was blaring through the speakers.


21 was the year of mixed drinks, 22 was the year I started liking beer. I didn’t like wine until I was 23. Now, it’s my drink of choice. I’d choose red wine over a Malibu bay breeze any day.

Fact Four: Speaking of the age 23, I turn 24 in one month and three days. Bakeries should start preparing cupcakes now. I plan to eat 57 (plus one for good luck).


Fact Five: I’ve been with Jeff since I was 18. He was two months away from 21 when I met him, making him nearly three years older than me. We will have been together five and a half years on March 16. We’ve lived together for two.


On Valentine’s Day in 2006, he took me to see Beauty and the Beast on Broadway. We ate at Carmine’s afterward—one my of my favorite restaurants in the city. I proceeded to fall down the stairs of the subway entrance in Times Square. It was the best Valentine’s Day ever. I’m not kidding. 

Fact Six: I am very shy in person. Always have been, but I try not to be, which makes me a little socially awkward. In groups, I’m more of a listener than a talker, unless I am 100% comfortable with everyone there. I’m usually very quiet.

Fact Seven: My two favorite workouts? Weight training and spinning. Hands down. I know a lot of people would say running, but I’m just not one of them. I’m ok with that. 🙂
