Yesterday

Yesterday had the potential to really suck.

Yesterday would have been an anniversary– a six year anniversary, to be exact.

Yesterday could have been miserable for me, but it wasn’t, simply because I have the best friends and family in the world.

A few weeks ago, I decided that I definitely did not want to spend the day alone. Instead, I did the exact opposite—I threw a party!

The invitation was simple: Girls only. Bring wine.

I knew I could count on my friends and family to be there for me.

Mareesa’s birthday was on Thursday, so the party doubled as a birthday party for her. Dara brought a birthday sash for her, and a bunch of fabulous crowns for us to wear.

She also brought a bunch of party decorations. My favorite was this door decorating kit:

I think it might stay on my door forever.   

Party snacks included Stacy’s pita chips and garlic hummus, and mini pretzels with cranberry honey mustard for dipping.

I also put together a fancy-schmancy cheese and grape platter:

Yesterday very easily could have been a depressing, and emotionally draining day for me, but I refused to let it be. I could have  dreaded yesterday for weeks, but I planned a fun event, and was excited about it instead. I could have sat around thinking about what should have been, but I chose to create new, happy memories to associate with the 16th. I conquered the day, and am ridiculously proud of myself for doing so.

I feel so incredibly lucky to have such an amazing support system. I don’t know what I’d do without my friends and family. They are constantly there, constantly caring, and constantly inspiring and motivating me to push through. They remind me to take one day at a time, and I am so thankful to have them in my life. I find it so difficult to be sad around them. They’ve helped make me excited and hopeful for these changes and the months ahead.

I know I’m going to be fine, and if I ever find myself questioning that, I can just look at my fridge:

Tell Me I’m Not The Only One Who’s Done This…

Spaghetti has and will always be my favorite comfort food…

…especially when my mother makes it…

…with whole wheat pasta and a spicy arrabiata sauce…

Dinner

…tossed with sautéed red peppers and onions, and sprinkled with parmesan cheese.

With homemade garlic bread on the side, and accompanied by a glass of red wine. Perfection.

The only thing that made this Tuesday night dinner even better was this dessert:

  • 1/4 cup Fage 0% Yogurt
  • 1/4 cup blueberries
  • 4 or 6 almonds
  • Sprinkle of toasted wheat germ
  • Sprinkle of shredded unsweetened coconut
  • Dark chocolate chips
  • 3 or 4 crushed Late July white chocolate mini cookies

Yum times a million!

Yesterday afternoon, I had one of those lunches where I just threw everything in my kitchen onto a plate:

You’re staring at a chickpea and celery salad topped with feta, black pepper, and a spoonful of Annie’s Red Wine & Olive Oil dressing. I also threw together some homemade guac with a very ripe avocado I had sitting in the fridge. I mashed it up with garlic powder, pepper, fresh-squeezed lime juice. The guac went really well with Stacy’s Garden Veggie Medley Pita Chips. It was a weird, but delicious and filling lunch.

In other news, I managed to leave my fridge open for an entire day. I stayed at Jeff’s parents’ house on Monday night, and when I got home on Tuesday evening, the door was wide open. Thankfully, everything was OK. 🙂 Oops! Please tell me I’m not the only one who has ever done this.

Jeff is doing some repairs around his mom’s house, and I went over to “help.” Turns out, I have no idea how to correctly identify a wrench, or any tool for that matter. So I just hung around to supervise, and to provide moral support!

I’m still trying to get my new apartment in order, and as soon as I do, I’ll have pictures to prove it! Promise!
